Any one any nice soup recipes they'd like to share? I've just made bacon, lentil and carrot and it's truly yum. I love the handiness of one pot meals so keen to add more ingredients to my Tesco online shop 😀

I just made pumpkin & sweet potato

1 x the mixed colour medium pumpkins currently on sale in Aldi, peeled, seeded & diced
2 x large sweet potatoes, peeled & diced
1 onion, diced
Chunck of fresh ginger or cheat's ready prepped to taste
Garlic to taste
2 anchovies blame Nigella but they really do work better than just salt
Pumpkin Spice mix off the Starbucks app / website oh god I'm hitting peak MN here!

Fry off the onion in olive oil until clear, prep the rest of the veg while this happens.
Chuck the veg, anchovies and spices on top of the onion, add half - 1 litre of water (enough to completely cover everything), give it a good mix, then bring the liquid to the boil.

Turn the heat down and simmer for around half an hour, the veg should mash with a fork.

Either: serve as is, first stirring in either natural yoghurt or cream; OR allow to cool and blend to smooth. When you're ready to serve, add the yoghurt or cream.

It works really well with crusty bread or the tomato and olive rolls that Asda sell.....

I first made this because of a glut of yellow sticker courgettes and searched for a recipe. I had a bit of feta in the fridge so I substituted that for the goats cheese. It was delicious and despite the bright green colour, my kids love it too. Lovely with some crusty sourdough bread. And easy to make from frozen which I often do now as I’ll buy courgettes in season, chop and freeze them.

A really easy and delicious vegan soup is,
Frozen cauliflower rice, saute with spring onion, add garlic, ground coriander & cumin, bullion stock, blend. Then add a dollop of non dairy yogurt, smoked paprika and strips of smoked red peppers (jar). Takes 10 mins and is quite luxurious!

I’m a chucker-inner, but did a great soup at the weekend.

Two sticks of celery
One leek
Two carrots
A bag of pre-sliced butternut squash

All cooked up until soft, then add a teaspoon of fennel seeds, and a hood pinch of cumin powder. Veg stock. Simmer for about 30 minutes, stick blender but not until it’s super-smooth.

Homemade tomato with fresh tomatoes is great, also celeriac soup is lovely (so long as you like celery flavour, LOL.)

We’re going to eating nothing but squash and courgette soup for the next few weeks. Time to get the last of the veg in.

courgette, onion, potato, bouillon or chicken stock, ginger, garlic, a few herbs or spices. Sometimes I add a whole chilli. All blitzed up until smooth.

I made cauliflower cheese soup in the soup maker a couple of days ago. Just onion, cauliflower and stock cooked into soup then season and add Philadelphia type cheese to taste and blend. A little sprinkle of smoked paprika is nice too.

Roast parsnips, salt, pepper scatter with Parmesan veg stock and blend.

Ham hock and lots of carrots, onions and a small amount of greens and orange lentils do not add salt, the hock will do that.

Butter nut squash and red pepper.

Leek and potato

French onion soup

Sunday soup, everything left or a bit wilted gets chucked in bit of a medieval style potage.

I made a delicious taco style soup with some leftover roast chicken, chicken stock, onion, tin of tomatoes, tin of mixed beans in chilli sauce, bit of leftover cooked broccoli, some frozen sweetcorn and chilli powder, coriander, cumin and oregano and garnished with tortilla chips.

Cajun bean soup - a 'whole meal' soup which also chases away most head colds. 😊

Fry 2 oz chopped bacon, add a large chopped onion, 5 sticks chopped celery, 1 each, red & green peppers, cook until golden & starting to soften.

Add a can of tomatoes, 300ml stock, bay leaf, and tabasco and simmer for 10 mins. Add a can of kidney or butter beans and simmer for 30 mins longer.

Spicey, healthy, blissfully comforting.
