Can we start a soup recipe thread?

Any one any nice soup recipes they'd like to share? I've just made bacon, lentil and carrot and it's truly yum. I love the handiness of one pot meals so keen to add more ingredients to my Tesco online shop 😀

Re making stock - I’ve had a lot of success after picking up a tip from Insta about making stock and saving waste.

Basically, stick a plastic bag (I make sure it’s a coloured one so I can find it easily) in the freezer.

Every time you have carrot trimmings, garlic skin off the cloves, tops off leeks, chicken bones etc i chuck them into the bag. Vegans/ vegetarians can omit the meat, obvs.

Then about 6 weeks later, I chuck it all in a pot, bung in bay leaves, few peppercorns and top with cold water. Every stock is slightly different depending on what I’ve chucked in.

Actually im making roast chicken today, how do i get a chicken and rice soup from this (Jewish penicillin we called it)

I hardly ever use recipes - usually just lots of different veg chopped small (always onions and celery) plus red lentils and/or pearl barley/orzo etc. and stock cubes.

However the day after Halloween I always make pumpkin soup with the one that was in the front window. (Waste not, want not.) Onions gently fried, chunks of peeled pumpkin, garlic, ginger, red chilli (fresh or paste) chicken or veg stock cubes, a stick blender in the pan, and coconut milk. Delish!

A good really substantial cold-weather one is Mulligatawny - good if you have any bits of cooked chicken to use up, or can use a fresh thigh or breast.
Fry gently chopped onions, 2 sticks of celery and 2 carrots for a few mins, add about a dessert spoon of (or more if you like) curry powder, fry gently a bit more. Add chicken stock (from a carcass if you have) simmer 20 mins, then add about 4 tbsps rice, simmer until rice is done, then add your little bits of chicken, plus half a chopped apple (don’t bother peeling) or a whole one if small, simmer until chicken is cooked or adequately heated through.
I serve it with naan bread.

I have made 2 delicious soups this last couple of weeks

Lentil and Mediterranean veg
roast- courgette, red onions, aubergine, peppers and garlic with some olive oil, dried oregano and season well.
bung in a pot once roasted and turned slightly charred on the edges. Add in a teaspoon of paprika, some chilli flakes and a carton or pasata. Add in a good handful of lentils. Bring to boil then simmer for 30 mins. Asda knob of butter, a chicken stock gel thing and blitz with a stick blender. Serve with a dollop of crem fresh and a drizzle of chilli oil.

lentil and roasted red pepper (jar)
gentle cook down a fine dice of carrot, onion and celery. Add in some garlic, red pepper paste. If you don’t have this sub with parprika tomato purée and chilli flakes. Add in 3 peppers from a jar with a little of the oil. Add in lentils and chicken stock gel with some water. Boil, then simmer and blend with a stick blender. Serve with fresh basil on top and some garlicky croutons. Amazing.

Both soups work out to be quite cheap.

I made this today, minus the croutons, ready for tomorrow’s lunch.

Squash and Apple Soup

The apple made it a bit too sweet for my taste so I’ve added a squeeze of lemon juice and it has lifted it well. I’m looking forward to seeing how it has ‘matured’ overnight!

My favourite comfort soup is copycat Panera Bread broccoli cheddar soup. I use creme fraiche rather than double cream as it’s a rich one!

I always cut up some potato quite small so it disintigates, thickens most soup up
