Summer dinners ... What is everyone eating?

What is everyone eating for dinner during the summer? We mostly eat as a family. I am pescatarian, DH eats meat, kids are super fussy! We try to eat vaguely the same meal with alterations like a veggie meal with added chicken or bacon for DH.
My appetite is much smaller during the summer and I just don't fancy anything really. Maybe a light tomato pasta, that's about all I can think of. I've been tasked with meal planning and have zero inspiration!

Dunno, I was wondering the same this morning. I'm going to do:

BBQ
Couscous salad (olives, cucumber, feta etc)
Homemade quiche
Tuna plait with salad
Frittata

Jacket potatoes with cold toppings like cheese and coleslaw, or tuna mayo

BBQ meats with cous cous

Cold pasta salads

Sometimes just bread, cheese and chutneys if I CBA

A lot of bbq or bbq style food.

The marinated chicken drumsticks, thighs, breast, kebab, pork steajs etc. Salad, new potatoes my fave meal.

Last year we seemed to cook on the BBQ daily for several months! Sometimes a large salad instead. These are some of things we are eating lately (not all on the same day!)

  • chicken thighs which have been marinated in soy sauce, fresh chopped garlic, ginger, brown sugar or honey, vinegar or lime/lemon juice. The marinade would work with fish, prawns etc too.
  • Large mushrooms on the BBQ, stuffed with chopped up mushroom stalk, onions/spring onions, breadcrumbs and cheese
  • Sliced courgette or aubergine. Goats cheese or feta on top, walnuts and drizzle of honey. Works well in the BBQ in a tray.
  • Peppers or little peppers stuffed with cream cheese, spring onions and garlic powder, then on the BBQ
  • Baked potatoes on the BBQ with various fillings

Salads:

  • Prawn, ripe mango, avocado, lettuce or baby spinach and toasted macadamias
  • Watermelon, green beans, grilled halloumi and toasted pinenuts
  • Thai Som Tam
  • Beetroot, lettuce or spinach, feta, toasted pinenuts and balsamic glaze
  • Caesar +/- chicken

My appetite is much smaller during the summer and I just don't fancy anything really.
My mother used to say this. I never understood it, my appetite is never diminished by the weather!
I have a handful of home grown new potatoes so I'll be having them with lots of butter and some garlic chicken and veg.

Last night we had Sabrina Ghayour's lamb wraps from Persiana Everyday. Gorgeous. The night before, we had BLT Chicken Traybake and tonight a summery pasta with lots of vegetables.

It's lovely being able to eat in the garden again...

Black bean and vegetable burritos with homemade tortillas, smashed avo and a fiery salsa.

Or chickpea tagine with homemade flatbreads, couscous, houmous and harissa 🤔 🤤

Bbq basically everything every night - big salads. Grilled asparagus is delicious with homemade Hollandaise sauce. Using pizza oven again in the garden and delicious strawberries and fresh cream or Cornish ice cream. Enjoying iced slushier and cucumber and mint water on ice. Happy summer everyone!

Tonight is hotdogs, wedges, roasted corn on the cob, salad, coleslaw. Brownies, ice cream and strawberries for pud.

New potatoes, quiche and salad
Omelettes, nice bread and salad
Sweetcorn fritters with deconstructed guacamole or other salsa type stuff
Spanish omelette
Greek gigantes beans jar with tsatziki, Greek salad, pitta

Baked things that can be prepped ahead and had room temp or with salad. Moussaka and lasagne are nicer left to settle for 30 minutes.

Wee puff pastry tarts with roasted veg.

Two or three vegetable salads (tomatoes, feta and crispy garlic; asparagus and capers; courgette and minty garlicky yogurt; white bean and red onion; aubergine with honey and chilli; chick pea and haloumi with pomegranate cous cous; griddled broccoli; steamed baby potatoes with mustard dressing; peas and French beans with hazelnuts and orange) and the meaty fishy folk can have plain grilled bit of protein on the side. Maybe some bread.

Today we are having baguettes with a variety of cheeses, ham, cold chicken, a lentil and spinach salad with nuts and then various raw vegetables such as sliced tomatos and cucumber with olives; sliced avocado and my favourite- thinly sliced radishes with salt and parsley.

Family with omnivores and pescatarians. Meals we've had in the last couple of weeks:

  • Burgers (beef/chicken/bean), corn on the cob
  • Butter paneer, spicy green beans, rice
  • Prawn and pineapple fried rice
  • Chicken/black bean fajitas
  • Quiche, salad, new potatoes
  • Halloumi or chorizo kebabs, baguette
  • Sea bass with lemon, new potatoes, asparagus
  • Kofte/falafel, hummus, pitta, salad

Tonight is lamb kofte and pork kebabs from the butcher, with flatbread, tzatziki, spinach, pepper and tomato salad, hummus, olives etc.

Tomorrow will be roast chicken with lemon and garlic, mixed salad and potato salad with a lemony oil dressing rather than mayo.

He's doing today, I'm on tomorrow. Hungry already.

Monday lunch will definitely be leftovers from both....
