Summer dinners ... What is everyone eating?

What is everyone eating for dinner during the summer? We mostly eat as a family. I am pescatarian, DH eats meat, kids are super fussy! We try to eat vaguely the same meal with alterations like a veggie meal with added chicken or bacon for DH.
My appetite is much smaller during the summer and I just don't fancy anything really. Maybe a light tomato pasta, that's about all I can think of. I've been tasked with meal planning and have zero inspiration!

Have you a recipe for this? It sounds nice. Especially if you could use butternut squash instead of sweet potato.

Thanks very much - that sounds delicious! How do you add the sweet potato (or butternut squash) - do you parboil it or something like it says to for potatoes? I wouldn't know what combination of veg to use that would cook at approx the same rate!

Lime trees and mango, wow.

I'd not heard of frozen mango before but I might look for it here; I usually buy the stuff in plastic tubs as I find peeling it difficult because of sore wrists, but frozen might be even better. I know I can get frozen ginger and garlic and onion, which might make for a very easy meal for someone with sore hands, depending what veg I use (I also tend to buy the butternut squash chopped up in bags! But lots of things might come frozen as well).

I just cut the sweet potato up small (along with a random carrot & a couple of peppers), sauteed it for a bit, & let the whole lot simmer in the sauce for half an hour, whilst I had a g&t 😁but you could certainly pre-cook it, & frozen mango would work fine.

Think if I made it again I'd chuck in a handful of something leafy like spinach or pak choi to cut through the sweetness, but it definitely shifted a handful of mangoes - 6 more windfalls today so attempting mango curd (like lemon curd) tomorrow.

I've already given away a fair few jars of spicy underripe mango pickle (like lime pickle).

The upper branches still laden with fruit, but at least once it's ripe I can just chop & freeze it. It's lovely, honestly, but a bit overwhelming when there's half a dozen more of the buggers on the terrace every time you poke your nose outside...
