Summer dinners ... What is everyone eating?

What is everyone eating for dinner during the summer? We mostly eat as a family. I am pescatarian, DH eats meat, kids are super fussy! We try to eat vaguely the same meal with alterations like a veggie meal with added chicken or bacon for DH.
My appetite is much smaller during the summer and I just don't fancy anything really. Maybe a light tomato pasta, that's about all I can think of. I've been tasked with meal planning and have zero inspiration!

Yesterday we had homemade bruschetta with tomatoes, red onion and basil, burrata and avocado. Today we're having lamb chops with halloumi and a bean salad.

I've got chicken marinating in tandoori paste and yoghurt that we will bbq, will also make some Greek yoghurt flat breads, with a few Nigella seeds thrown in for good measure.
I'm also going to pop some cauliflower in the air fryer with a bit of cumin and ground coriander. Then just a green salad, raita and my current favourite pickled red onion which I have a killer jar of in the fridge.

Tomorrow it will be home made fishcakes with salads and home made slaw.

Monday needs to be quick so fresh pasta, garlic, cherry tomatoes, prawns chilli and parsley with more salad!

Tuesday we have got gammon with pineapple and pepper salsa, wedges and green beans.

Wednesday chickpea tagine with Moroccan cous cous salad and roasted veg.

Thursday roasted veg fritata with garlicky green beans and tender stem broccoli.

Friday - ?? Potentially cod wrapped in pancetta but that could change!

It's hardly boiling hot outside so I still cook normal.

Today we planned a chicken curry but as I feel ill, we do Chicken alfredo for DD and DH.

Tomorrow it's homemade pizza in our pizza oven.

Under the week we have Pork Saltimbocca with baby potatoes and roasted aspargus, fajitas and a curry.

It has to be above 25 degrees by 6pm for me to think of salad for dinner.

I like stir fries with rice or noodles in the summer, but the fussy kids won't touch them 😑

Tonight I'm having a large tomato stuffed with prawns with some greenery, then strawberries with cream cheese heart.

Tomorrow I'm having chicken & mushroom risotto, then pineapple Romanov.

Monday will be chicken Caesar salad, followed by strawberries & meringue.

Thank you for all your ideas. I trawled through the Tesco website and came up with a few ideas I thought everyone might eat. Little bit of a meal plan for anyone feeling as uninspired as I was:

Saturday - fish finger and salad wraps
Sunday - BBQ (burgers for the kids, salmon for me, marinated pork loin for DH)
Monday - tomato and mozzarella pasta
Tuesday - salmon, new potato and watercress salad

That's as far as I've got for now!

Of course- finely chop a small red onion and squeeze the juice of a large lemon over the top. I like to leave it to sit for a bit to acid cook the onion. Add salt to taste, a handful each of chopped parsley and mint (dried also works well), cubes of cucumber, tomatoes and a tin of cannellini beans. Top with plenty of olive oil and give it a good mix. I sometimes add pitted olives and a tin of tuna but we’re having halloumi with it tonight.

Fish or veg curry
Chicken gyros
Chicken fried rice
Tapas (garlic prawns, tortilla, salad, bread)

@reluctantbrit it's gone 6pm and still 22degrees here with beautiful sunshine and has been warmer earlier in the day and has been similar temps for the last couple of weeks and warmer temps predicted for the next 10days. So I'm happy to go full summer menu!

Salads based on smoked salmon, mackerel or prawns in sauce.
Salads, mix and match with whatever I have in.

Lettuce, radish, spinach, spring onion, slices of avocado, segments of satsuma, sliced apple, small cubes of cheese, a few sultanas, chopped egg.

Eaten with garlic bread.

@Reluctantadult same! DH doesn't like them either but simple pastas and stir frys would do me for the next couple of months!

This week weve had - Bacon, avocado, tomato, fried egg on toasted rye sourdough (this was delicious)
Easy fish stew (bbc good food recipe)
Wraps with salad, hummus, falafel, beetroot,grated carrot pickled chili's
Quiche and salad
Chorizo and butterbean stew with homemade fresh pesto and sourdough

Good for you. I went inside when the sun was gone from our patio because the wind is still too chilly.

Salad and or new potatoes with the following:
Quiche or frittata
Poach salmon.
Stuffed vine leaves
Mini veg pies
Cook cold chicken
Chickpeas in various forms...
Bean pie
Cheese burger pie
Mini veg pasties
Stuffed savoury dumplings (veggie)
Cheese fondue
Goats cheese tartlets
Veggie kebabs
Pizza.

That's pretty much our summer menu, unless we're doing a BBQ.

The mango tree in the garden keeps firing windfalls at me - may as well put them to use!

Have you a recipe for this? It sounds nice. Especially if you could use butternut squash instead of sweet potato.

BBQ’ed chicken kebabs or koftas or salmon with salad and new potatoes/couscous/bulgar wheat.
Bruschetta.
Peri peri chicken.
Steak and fries.
Paella.

Tonight, we're having chicken marinaded in Prymat gyros seasoning, this salad, this chilli sauce and pittas!
Last night it was barbecued chicken, mini jacket potatoes and Roman peas. We've also been getting extra thick cut steaks, cooking them on the barbecue and having it with soft tacos, salad and flatbreads, or rice and grilled veg 😋

I'm needing the same!

I make big bowls of potato salad, coleslaw and a basic type salad and leave in the fridge and use as sides for the week. Nachos are a great side dish too. Tacos, pockets, pittas, flatbreads and wraps then season the meat however you like. Have a stocked fridge full of dips, cheeses meats and you can just put on the table. I find hot dogs/ribs/chicken wings/salmon are easy to jazz up or keep as a basic meal. Gherkins, pickled red cabbage, halloumi, olives are good to always have stocked/made.

I love summer food!
