Tonight is tik tok pasta that we found during lockdown.
Essentially shove a block of feta with onion, garlic, tomatoes and some herbs and oil into a roasting dish in the oven for 30 mins, smush it all up and put on top of pasta.

Other quick meals have been literally pasta with a dolmio stir in and cheesy garlic bread, jacket spuds with cheese and beans, jacket spuds with tuna and cheese, boiled eggs and soldiers and one of my faves - tayto sambos with laughing cow cheese on fresh white bread.

An omelette. I've spent my whole life avoiding eggs due to being forced to eat boiled egg sandwiches at school by the horrible dinner lady, always thought I didn't like them at all until DH started making quiche and I discovered I liked egg like that. Then he made me try omelette and it was incredible and I've been hooked ever since 😆

Tonight I was going to make chicken breasts filled with cream cheese wrapped in Parma ham but the cheese had gone mouldy so I filled them with tapenade which was even nicer!

I also make something similar with a Boursin cheese and cherry tomatoes. Roast in oven and then mix into cooked pasta.

@mrsharrisgoestoparis tinned spuds are brilliant. I have big and small tins. I use one small tin for two people, you empty them into a saucepan and add extra water to cover them, heat gently for 6 to 8 mins. You can chop them small and fry, add them to all sorts of dishes, my favourite is a spinach and potato curry done with frozen spinach. Love tinned spuds. I find Sainsbury own brand the best, in the reddish brown tin. The super cheap brands sometimes come out with harder potatoes in them I find so there ends up being more waste.

If you can find them, the spuds in glass jars with a metal lid are even better imho than the tinned variety. When I am rushed for time, I shove them in a tray bake with sausages or chicken thighs with onions, garlic, red peppers and thyme. Make sure they are covered in a light coating of olive oil, s&p. Or use them, again in a light coating of olive oil, in a tray bake with frozen salmon, some lemon wedges, maybe some roasted baby leeks or asparagus.

Really quick sausage pasta:

Remove the skin from Italian sausages and roughly chop. Fry garlic and onion in a pain. Add sausages and cook, breaking up the meat a little. Add half a tin of tomatoes, salt, pepper.
boil up small florets of broccoli. Add these. Cook down and add a bit of marscapone or cream cheese. Lots of fresh Parmesan. Boil pasta (bows are nice, or fusilli) and add to the pan. Mix it all up and add more Parmesan.
