Do you have a quick supper dish? I just found a great one.

I was really fancying pad Thai. I didn't want to order. So I googled pasta and peanut recipes. I found a really easy one with ingredients that I have. It took about 15 minutes. Saved money was pretty healthy and quick.

It's vegetarian but you could easily add prawns or meat? I might add tofu next time?

Anyone got a good one to add?

Baked feta pasta. Block of feta, pack of cherry tomatoes, red onion chopped into wedges, 2 sliced garlic cloves, 1tsp oregano, salt and pepper. Bung it in the oven for 15 minutes while you boil your pasta, drain pasta and mix everything together. Easy and tasty.

Garlic and herb pasta.
Boil pasta
Drain but leave a little water in the pan
Put pasta back in pan and add generous dollops of garlic and herb soft cheese
Stir until mixed well and warmed through
I like to add some fresh tomatoes and lots of black pepper

Carbonara.

boil spaghetti.
Fry bacon/pancetta with a couple of whole garlic cloves in the oil.
break eggs into a bowl of Parmesan/hard cheese and beat them a bit. Beat in a spoonful of pasta water.

drain the pasta and keep the water to loosen it a bit if needed. Hoik the garlic cloves out of the pig.

off the heat, mix everything together quickly and vigorously (don’t let the egg sit there turning into scrambled egg, whack it through the spaghetti).

delicious, and takes however long it takes the spaghetti to cook plus a quick mix.

I cook some quorn 'chicken' bits with honey and a bit of butter in the pan, then when it's nice and brown put it on a wrap with sauce(I find sweet chilli or mayo nicest but DP likes bbq) and they're really filling, not healthy I'll admit but very nice!

Teriyaki chicken burgers. Cut chicken breast in half horizontally so thin and even. Marinade in teriyaki sauce - if you can do this step in the morning and leave in fridge even better.

Then cook in oven while you get together buns, lettuce, tomatoes etc.
Side of carrot sticks and peppers.

A quicker version of your original recipe for one person -

1 packet of Nissin sesame noodles (about 60p).

Following packet instructions but add choice of veggies - I add frozen peas, finely shredded cabbage/carrots/whatever is in the fridge. If its for dinner I might add it some cooked chicken or frozen prawns.

When cooked add a couple of tablespoons of peanut butter and some chilli sauce.

Yum, quick lunch/dinner

Excellent. Never heard of those noodles though?

@Cognacsoft thanks for that, I have just added it to my recipe folder.

When my kids were younger and I needed something fast I would do fried rice with tuna. Just rice, tuna, frozen peas and sweetcorn with some garlic from a jar, soy sauce and mixed with an egg at the end. Rice takes 15 minutes in a rice cooker. DS and DD are both adults living at home now and will often make this for their lunch or dinner using microwave rice as they still love it.

I also do something we call Special noodles. Fry on fairly high half an onion and a mushroom per person in a small pan so they soften & char a bit, put in the seasoning packet stir quickly and then the water amount for the noodles and put them in. Cook for 3 mins or required time. Just before the end a few frozen peas and sweetcorn. Put in a bowl and grate over cheddar. Max 5 mins and very filling. I sometimes add some leftover roast meat, pork works well, when frying the onion etc

Roast gnocchi: bag of cherry tomatoes, roughly chopped pepper or two, roughly chopped onion (red or white), bag of fresh gnocchi in a mixing bowl with a couple of tbsp with an oil. Toss well so everything's coated in oil then spread out on a baking tray. Roast at 180c for 20 minutes or so - the tomatoes will burst and make it a bit saucy and the gnocchi will go crispy like tiny roast potatoes.

Stir through some grated cheese (parmesan/cheddar) and fresh basil/parsley if you have it. Serve with a salad/garlic bread if you like.

when we have roast potatoes we always make a double batch, so that we can save them for a this favourite quick supper : spice kitchen coconut daal, regularly on special offer, store cupboard friendly, tastes restaurant level, takes one minute to make. I make it, add extra water and a bunch of frozen spinach, once the spinach is cooked, crack a few eggs on top and put the lid in, let them poach. Zap the left over roasties and serve with spinach dal and poached egg in top. Loads of mango chutney is nice on the side, and some Nan breads .

Nan breads often have a long shelf life. We always have some in the cupboard and are great for turning into a quick pizza. Morrisons do pre sliced black olives in a jar. Soo simple. And we keep a bag of frozen Mediterranean veg in the freezer, so the peppers and aubergine etc from that get lopped on top of the Nan, after a spread with tomato paste. Capers are nice thrown on too. These quick pizzas ( we don’t bother adding cheese, actually! ) are a real fave in our house. Drizzle with some lemon or chilli oil, yum!
