Do you have a quick supper dish? I just found a great one.

I was really fancying pad Thai. I didn't want to order. So I googled pasta and peanut recipes. I found a really easy one with ingredients that I have. It took about 15 minutes. Saved money was pretty healthy and quick.

It's vegetarian but you could easily add prawns or meat? I might add tofu next time?

Anyone got a good one to add?

Store cupboard curry
Chop an onion and 2 cloves garlic. Fry till soft
Add a large potato, peeled and chopped into 1 inch chunks (or a tin of potatoes), a tin of chickpeas, drained, and frozen spinach
Stir in a tablespoon of Pataks curry paste and fry gently for a few minutes
Add a tin of tomatoes, bring the heat up then simmer until potatoes are soft
Takes 20 minutes and improves the next day.

Sounds like sag aloo ish? Very nice.

We mash up a pack of smoked mackerel and stir it into steamed rice with peas and sweetcorn, or whatever frozen veg we have. Lovely!

Mine is onion, garlic, a pepper if I've got one (or maybe frozen); curry powder, maybe some other spices, ginger if I've got any; tin of coconut milk, tin of toms, couple of tins of chickpeas. Might add spinach if I've got any, or have that on the side.

We add chopped hard booked egg and call it kedgeree.

We are a predominantly veggie family here, DH isnt but 2/3 DD’s are and I’m happy with more meat free days than not so always on the lookout for ideas.

A couple of favourites here…

A take on enchiladas, X2 tins of chopped tomatoes, onion, peppers cooked down with a tin of chickpeas, garlic, cumin, smoked paprika a tea spoon of honey or pinch of sugar. Once all soft and smelling delicious spoon into wraps, roll and pop into large baking dish, top with grated cheese, spring onions and lots of sour cream and bake until the cheese is melted, really delicious (sour cream baked in one of may favourite things, it sets like a soft cheese on a pizza 😋)

Cod tagliatelle, roast a couple of cod fillets on a baking tray with red onions, red peppers, cherry tomatoes and ALL the garlic, coat with lots of olive oil, once ready take back of fork and flake large pieces, and make sure all tomatoes have broken down, add to cooked tagliatelle, top with lots of fresh parsley and serve with crusty bread.

Im not sure what you call this one tagine?! Cube and roast a tray of suitable vegetables, we like aubergine, red onions, sweet potatoes but you could add anything, olives work well too, add a can of chick peas, before put on the oven, coat with chopped tomatoes, cumin, Harissa, garlic paste, honey and olive oil and roast until soft, once cooked add a couple of pouches of zapped (microwaved) quinoa mix all together, top with coriander a big dollops of humous and serve with flat breads, sometimes we also add lamb if just DH and I…

A firm fave in our house with DC is bacon tomato pasta.

Boil pasta. Fry bacon and add fresh tomatoes (ideally to use up soft ones or tinned work in a push too)

Mix together with a tablespoon of mayo.

Done! 15 mins. You cna also add any other veggies to make it more healthy if needed but this is an ideal mid week staple here

I do similar but with mushrooms and pesto.🤤

Chicken & broccoli pesto pasta......does what it says on the tin.....boil the pasta and chuck the broccoli in with it half way through cooking (or steam it on the top on the pan), meanwhile dice chicken breasts and stir fry (or use leftover cooked chicken), then drain the pasta and mix everything together with a couple of teaspoons of pesto per person and heat through. You can stir baby spinach into it too and a bit of grated cheese on top if you're feeling fancy!

I didn't have any white wine when making it once so used a gifted bottle of Lidl champagne which felt very decadent but was probably cheaper than a white wine I would have used

Eggs. I get like Bubba from Forest Gump about eggs: scrambled eggs on toast, friend egg sandwich, poached eggs on spinach, fried egg with garlicy fried cabbage, egg fried rice, eggs with dippy soilders, omelette, frittata, carbonbara, baked eggs, egg mayonaise on toast, egg in a cup with toast, eggs and beans on toast, eggs eggs eggs eggs eggs 😂

I found a really quick sausage casserole recipe last week....
Fry sausage and onion till starting to brown (thin sausage is best)
Add chopped red or yellow pepper and minced garlic
Add tin of baked beans, chicken stock cube, tsp thyme, tsp paprika, tbsp Worcestershire sauce, tbsp tom puree, half (ish) bean can of boiling water.
Stir together, simmer for approx 15 mins till sausage is properly cooked and sauce is a bit reduced.
I also added in a pouch of pre-cooked put lentils to.pad it out a bit!

Red pepper, onion garlic and pasta.

Boil pasta conchigli usually
Fry chopped onion and garlic ,
Add chopped red peppers once the onion and garlic fried,
Add green pesto...my preference sacla pesto
Once all cooked add to cooked pasta with a sprinkling of salt...delicious and vegetarian if you're that way inclined.

Bacon and leek pasta - Boil the pasta. Fry some bacon, add the leeks, fry them with the bacon. Add Philadelphia cheese with a little of the pasta water. Season. I like to add some toasted pine nuts. Stir through the pasta.

Good quality frozen goujons or nuggets, warmed jar of uncle bens sauce. Bosh!

Not sure how much this will help. But the tagine, I’d put the rice in the dish in the oven with the veg so it crisps up in places and takes some of the flavour. I’ve put paprika halloumi on top of that before.
maybe a yogurt and lime dressing if I can be arsed

Gnocchi in tomato sauce / fry the gnocchi and add sauce and Parmesan. Can add chorizo too. I usually have a flit of frozen sauce as my makes tons from her allotment but a jar or tin of tomatoes with some onion and garlic.

Quesadillas with whatever you have in the fridge

I have this recipe for chilli peanut udon noodles a little too often, usually with some frozen gyoza in the air fryer:

Recipe serves 2:
2-3 cloves minced garlic
2 tablespoons soy sauce
2 tablespoons smooth peanut butter
1 tablespoon sesame oil
1 teaspoon brown sugar
1 teaspoon chilli flakes

Put all the above in a mixing jug with enough water to make it mixable (couple of tablespoons). Don't worry about adding too much water, it absorbs in to the noodles pretty fast. Give it a good mix and add to a pan on medium heat until it just starts to bubble around the edges.

Add enough udon noodles for 2 people and combine them with the mixture, add more water if needed. Noodles should get a good coating.

Add chopped spring onions and sesame seeds to the top and enjoy :) If you use a mixture of black and white sesame seeds it looks well fancy.

Mine's a true one pot meal.
Cook and drain spaghetti - only until it's still a bit damp.
Put it back in the pan. Add to the pan some shredded smoked salmon, lemon juice, cream, salt, pepper and dried dill.
Serve 1 minute later.

Leek and potato soup
fry leeks and garlic
add a few chopped spuds
add stock
bring to boil, simmer and blitz. Add cream or mild if you’re feeling fancy

We love a British version of Carbonara - fry off some bacon, put your spaghetti on to boil. In the meantime beat together a couple of eggs, plus one egg yolk, and lots of grated parmesan. Reserve a mug of cooking water.
Once it's all cooked, drain the pasta, leaving it a bit 'wet', then very quickly (and off the heat) stir in eggs and cheese, lots of pepper, and bacon and the fat it cooked in. Add as much cooking water as you feel it needs, then serve with loads of parmesan on top. Totally not authentic carbonara, but we love it!
