Do you have a quick supper dish? I just found a great one.

I was really fancying pad Thai. I didn't want to order. So I googled pasta and peanut recipes. I found a really easy one with ingredients that I have. It took about 15 minutes. Saved money was pretty healthy and quick.

It's vegetarian but you could easily add prawns or meat? I might add tofu next time?

Anyone got a good one to add?

When I really can’t be arsed, I have frozen mixed veg microwaved with garlic butter and a bread roll. Now THAT’S just heating things through (although I do make the bread rolls and freeze them). My kiddo virtually lives on beans on toast and I don’t care for it. So it’s what I have when she’s having BoT for the fifth time this week and I’m done in.

It’s super lazy because I batch cook anyway, so there is always something I could defrost. But some days it’s just beyond me to wait the 7 or 8 minutes it would take to microwave it and the further three or four to zap some veg as well. And other than not much protein, it’s healthier than most things that take that length of time!

Ooh I have a nice quick recipe using mayonnaise:

Mix together a cup of mayo, a cup of chutney (or if you don't have chutney use apricot jam), and a packet of brown onion soup powder mixed with some boiled water.

Pour over chicken pieces, cover and bake in the oven.

It doesn't sound great but its really delicious.....

(I am not in the UK so if you can find Mrs Balls chutney from SA that is the best to use)

Mine is a take on a Jamie oliver prawn pasta recipe - super quick and we love it.
spaghetti

Fry garlic with chillies and prawns, add a splash of white wine and some red pesto, bit of lemon juice, mix with cooked spahetti or linguine. Serve with rocket and parmesan sprinkled on top.

Could eat that now.

My SUPER lazy one from my single days is fresh, filled ravioli that you get from a supermarket, boiled with a bag of pre-prepared veg for a few mins - drain and then add a tomato sauce. (I must confess I used ketchup but I was young and lazy) (Still love it)

Pork ring pasta- fry thick slices of onion and sliced up Mattesons smoked sausage, add tomato soup, pasta and enough water to cook the pasta. Boil until pasta is cooked.

Big Mac salad (4)
cook 1lb mince, salt and pepper and garlic
lay in bowl
Leafy greens
Sliced pickles
1 cup shredded cheese
2 cups grape tomatoes
1 red onion

put mince over salad and drizzle with thousand island dressing

if you have growing teens I cook a packet of 60second pasta in the microwave then mix it in with the beef before putting on the salad

A quicker version of your original recipe for one person -

1 packet of Nissin sesame noodles (about 60p).

Following packet instructions but add choice of veggies - I add frozen peas, finely shredded cabbage/carrots/whatever is in the fridge. If its for dinner I might add it some cooked chicken or frozen prawns.

When cooked add a couple of tablespoons of peanut butter and some chilli sauce.

Yum, quick lunch/dinner

A favourite here is
put some roasted veg in a baking dish for 20mins
then add a block of feta and pack of gnocchi for another 20mins

Then mix together with a a dash of honey

it was a gusto recipe not sure if they still do it but super tasty!

A bag of ready chopped stir fry veg, cooked chicken or prawns, a splash of soy sauce and some chilli flakes and microwave rice. Dinner in 5 minutes and no prep!

My go to is salmon spaghetti
Boil spaghetti. Stir fry broccoli, sliced garlic and sliced deseeded red chilli for a few minutes. When spaghetti is cooked add the stir fry veg and a packet of honey roast salmon. Delicious and the kids love it!

My absolute favourite dinner at the moment is one that you can either do quick and dirty, or spend a bit of time to fancy it up.

Fancy:
Finely dice onions carrots and celery. Or leeks if you prefer. Sweat gently in a little oil until soft. Add in sausage meat - I have to be honest here, I buy the cheaper fresh ones from Asda and take them out of their skins. Cook till browned with little crispy edges. Add in a good squirt of tomato puree and cook for a few minutes until caramelised and darkened, then add in a jar of nduja paste. Deglaze with red wine. Add a tin of tomatoes and a parmesan rind if you have one, and simmer for about 15 minutes. Add salt and pepper, basil and oregano to taste. Serve with fresh tagliatelle and fresh parmesan.

Dirty:
Snip sausages into a pan using scissors and brown. Add tomato puree as above and then nduja paste. Deglaze with a tiny bit of Worcester sauce or even balsamic vinegar if you don't have wine. Add your tinned tomatoes and seasonings and simmer for 15 minutes. Serve over any pasta you have.

It's a really nice twist on a bolognese, and because it's sausages rather than beef it doesn't take nearly as long for the sauce to become lovely and rich and tasty. My kids love it.

Another one I love is anything one pot - brown some chicken drumsticks in a pan and then add washed rice with your choice of seasonings - oregano, basil and lemon for Greek, or a Cajun mix. Make sure to include a chicken stock cube (or powdered stock which I got at a Chinese supermarket and is a LOT stronger). Anything you like really. I use two cups of rice to 1.5 cups of boiling water, add into the pan then nestle your browned chicken on top, cover and simmer for 10 mins. Then remove from heat and leave for another ten minutes - don't lift the lid!

Perfect chicken and rice every time in one pot. Of course you can fancy it up with onion and carrots or whatever you like really. It's just quicker that way!\

Oh - one your teens will love -

Instant ramen - make as per packet and then drain most of the broth. Add a spoon of peanut butter, a little soy sauce and some hot sauce and mix with your noodles. Delicious.

Sounds lovely, pesto pasta is a firm fave but I like the addition of broccoli and chicken

Monday is the day we go straight to dc clubs from school and only get home at 6.30pm. Dc are always starving by the time we’re home too so I make them my take on a quesadilla. I use the corn and flour tortillas but you can use any tortilla you like. Put one in the pan, add whatever filling you like, lots of cheese, sour cream and salsa, put another tortilla on top, fry both sides, cut into 4 and eat. It’s perfect for leftovers from a Sunday roast. I switch it up every week. I’ll add things like chicken, peppers, sweet corn and spring onions or tuna mayo, prawn and avocado, beef brisket with chutney etc. You can mix shredded chicken with some taco seasoning and back beans for an authentic Mexican flavour. The choices are endless and if you switch it up every week the dc don’t feel like they’re eating the same thing. Serve with a salad and it’s healthy and quick. It’s a staple in this house.

I also make a really quick curry sauce by frying onions ginger, garlic, Indian spices and a can of tinned tomatoes. Cook it down for 15 mins or so, add either some creamed coconut of half a tinned of coconut milk and cook for another 10 mins or so. It’s so versatile and can be used for chicks, lamb, prawns or paneer if you would like to go veg. Finish with fresh corriander if you have it.

We are a predominantly veggie family here, DH isnt but 2/3 DD’s are and I’m happy with more meat free days than not so always on the lookout for ideas.

A couple of favourites here…

A take on enchiladas, X2 tins of chopped tomatoes, onion, peppers cooked down with a tin of chickpeas, garlic, cumin, smoked paprika a tea spoon of honey or pinch of sugar. Once all soft and smelling delicious spoon into wraps, roll and pop into large baking dish, top with grated cheese, spring onions and lots of sour cream and bake until the cheese is melted, really delicious (sour cream baked in one of may favourite things, it sets like a soft cheese on a pizza 😋)

Cod tagliatelle, roast a couple of cod fillets on a baking tray with red onions, red peppers, cherry tomatoes and ALL the garlic, coat with lots of olive oil, once ready take back of fork and flake large pieces, and make sure all tomatoes have broken down, add to cooked tagliatelle, top with lots of fresh parsley and serve with crusty bread.

Im not sure what you call this one tagine?! Cube and roast a tray of suitable vegetables, we like aubergine, red onions, sweet potatoes but you could add anything, olives work well too, add a can of chick peas, before put on the oven, coat with chopped tomatoes, cumin, Harissa, garlic paste, honey and olive oil and roast until soft, once cooked add a couple of pouches of zapped (microwaved) quinoa mix all together, top with coriander a big dollops of humous and serve with flat breads, sometimes we also add lamb if just DH and I…

Looking forward to following this thread for inspiration.

Don't get me wrong these sound really lovely but none of these are quick/easy suppers in my book! These are all something I'd make if I had plenty of time and ingredients available...

We love a British version of Carbonara - fry off some bacon, put your spaghetti on to boil. In the meantime beat together a couple of eggs, plus one egg yolk, and lots of grated parmesan. Reserve a mug of cooking water.
Once it's all cooked, drain the pasta, leaving it a bit 'wet', then very quickly (and off the heat) stir in eggs and cheese, lots of pepper, and bacon and the fat it cooked in. Add as much cooking water as you feel it needs, then serve with loads of parmesan on top. Totally not authentic carbonara, but we love it!

I've just had something similar for tea. Made with the last of a gammon joint and added mushrooms.. Took 15 minutes.
