After watching too much Masterchef I decided instead of just hooking the pineapple slices out of the tin, I'd be a bit more adventurous.

So I cooked them in butter, with a bit of the syrup, and a sprinkle of brown sugar , then added a splash of rum to de glaze the pan which made the most fucking glorious caramel.

Bloody hell. Served with some decent ice cream it was simply glorious.

Yum. It's also great on the BBQ or a hot grill pan with your ingredients plus add black pepper.

I made pineapple upside down cake a few years ago. My then DP had never had it. It was rare that the age gap showed, but this was one of those times. Grin

Do the same with a sliced banana, serve over vanilla ice cream ~ Bananas Foster ~ delicious!
Grind black pepper over sliced strawberries to add a taste spark!

I made a plum butterscotch upside-down cake for lunch today, but I use muffin mixture with sunflower oil as it is easier than creaming butter and sugar. It is sightly more stidgy but no one minds - all cake is OK in our house!

I am going to steal your pineapple inspiration for tomorrow's pudding. I also like doing the same thing with bananas.

You used the term deglaze, and I think that alone gets you about 33% of the way.
