After watching too much Masterchef I decided instead of just hooking the pineapple slices out of the tin, I'd be a bit more adventurous.

So I cooked them in butter, with a bit of the syrup, and a sprinkle of brown sugar , then added a splash of rum to de glaze the pan which made the most fucking glorious caramel.

Bloody hell. Served with some decent ice cream it was simply glorious.

I made it minus the rum for mine and DS' pudding, with loads of plain yogurt. Thank you for the inspiration @RozHuntleysLeftHand !

I made this last night, this time with banana. To reduce the cals and reduce the sweetness, I switched out brown sugar for a dash of maple syrup. Delicious and still caramelised!

I gave myself third degree burns flambéing bananas as a teenager.

Watch pans full of sugar, rum and fruit carefully. They will attack.

A tablespoon of rum cooked off in a frying pan is quite safe.

But if I was substituting I'd probably use a fiery Jamaican ginger beer.

You could use a no/low alcohol rum if you're concerned, but the alcohol will cook off in the heat from normal booze.

You could also sub with fresh ginger (or vanilla bean) and a simple sugar syrup.
