Omg I just cooked the most amazing treat

After watching too much Masterchef I decided instead of just hooking the pineapple slices out of the tin, I'd be a bit more adventurous.

So I cooked them in butter, with a bit of the syrup, and a sprinkle of brown sugar , then added a splash of rum to de glaze the pan which made the most fucking glorious caramel.

Bloody hell. Served with some decent ice cream it was simply glorious.

ooooh, DC bought cherry vanilla rum which I thought sounded revolting, but now considering the possibilities!

You used the term deglaze, and I think that alone gets you about 33% of the way.

I made a plum butterscotch upside-down cake for lunch today, but I use muffin mixture with sunflower oil as it is easier than creaming butter and sugar. It is sightly more stidgy but no one minds - all cake is OK in our house!

I am going to steal your pineapple inspiration for tomorrow's pudding. I also like doing the same thing with bananas.

Still too lazy! Grin

However you should definitely try mine tomorrow.... Plenty of sugar and syrup then a great splash of rum (I used spiced) bloody amazing stuff.

I haven't had a pineapple upside down cake for decades. That ought to be remedied.

Just do not do it in a springform tin...with honey drizzled over the pineapple before you put the batter in.......subsequent honey leakage v v v messy to clear up.

I did similar a while ago with bananas wrapped in ready bought flaky pastry baked in oven and drizzled with M&S bottled chocolate sauce

Oooooft I will be making this - need to get some 'healthy' dessert ideas as I'm back on whole foods tomorrow no over processed chocolates/sweeties ideally.

Do you do it in a frying pan? (Sorry if you've already said this)

Bananas.. Split the skin, fill with chocolate buttons/broken easter egg... wrap in foil and bake in the oven for 25 to 30 mins

Yep frying pan.
Good whack of butter good sprinkle of brown sugar, some of the syrup.
Cook till pineapple chars a bit.
Good splash of rum in pan
Stir till makes a caramel
Probably not the healthiest but omfg is delicious

Ooh. I used to do bananas fried in butter, then a squeeze of orange juice, bubble it down and then mash it for DS as a treat when he was little. He loved it. So did DP 🙄. DS is 17 now - I reckon pineapple in rum and butter would go down a treat!

You can also do it with peaches, fresh or tinned but peach halves rather than slices. (Skin the peaches if fresh, cut in half and remove the stones. )
Sauté in a roomy pan with a large knob of butter and dessertspoon or two of sugar until the peach halves are sticky and caramelised, add a really good slug of alcohol (Grand Marnier is amazing) and then.... set light to it!
Et voilà - pêches flambées.
Serve with cream, crême fraiche or ice cream.

I Recently did pineapple upside down cake, with pineapple yogurt cake.

Google "French yogurt cake"
Easiest cake ever. Pick a flavour you like, use the pot as the measure for everything, mix it, add or not your choice of fruit or chocolate chips or banana chips ( I love blueberry with frozen or fresh blueberries) strawberries, gooseberries, rhubarb etc.

Never failed me yet and I've done a lot.

Sound fabulous. I made a sponge with raspberry jam on top and desecrated coconut. We had it with custard, if I ever go on Masterchief (as we call it), I’m making it as a pudding.

You're welcome. I'd forgotten about amaretti biscuits -- you can absolutely sprinkle crushed ones over the top for a lovely crunch. You could also use Amaretto liqueur !

If you're after a treat lower in calories, whipped greek yoghurt is a lovely replacement to ice cream and cream. I actually quite like the tang to cut through rich foods.

I also highly recommend grilled peaches with a bourbon brown butter sauce and a biscoff crumb. *Chef's kiss.
