Vegetarian breakfast sandwiches

I’ve volunteered to provide breakfast sandwiches/rolls for a working group on a community project. It’s a token gesture of appreciation, rather than a feast, so plan to keep it to trays of bacon rolls, tea, coffee and juice. I will obviously also provide a veggie, vegan and gluten free option. GF I have separate rolls and will ensure no cross contamination. For the vegan option I was going with smashed avocado with chilli flakes and grilled tomatoes, which leaves the veggies. I’m thinking fried egg rolls but wonder if a meat free sausage would be better received. Any thoughts?

Why not give the veggies the vegan option? I'm vegetarian and your vegan option sounds lovely. Are there definitely GF/vegan people going to be there?

The problem is it’s a kind of turn up on the day affair, so I won’t know dietary requirements ahead of time, so was just hoping to cover all bases!

I would go for the egg, think it's more likely to have a wider appeal as some veggies aren't keen on certain products like quorn etc.

I would do sausage baps for both the veggie and vegan option - Linda McCartney sausages are vegan. It keeps things simple and everyone is being offered something similar. Or, if you want to steer clear of meat substitutes, just do the avocado option for both veggie and vegan. You might have a problem with meat eaters preferring the avocado option over bacon and not having enough for the non-meat eaters.

As you are grilling the tomatoes, griller halloumi would be a great addition to easily turn the vegan one into a vegetarian option.

If you want less effort go vegan sausages and cater for both (it is a pet hate when restaurants do this but as a volunteer it seems more than fair)

Egg and the avocado sounds great though.

Get vegan sausage covers both veggie and vegan. Lots hate avocado.
Maybe offer egg rolls as well for those who don’t like sausages/bacon

Im a vegetarian and would go for a veggie sausage bap every time (my favourite sausages are the cauldron ones)

But if not available I'd settle for egg 🍳

I'd do one option that caters for veggie and vegan. Be that the avocado for them both, or some vegan sausages for them both.

Are you offering the meat eaters a choice or just bacon rolls? If you want to limit work then you could do vegan sausages. That would work for vegans and vegetarians (and not all vegetarians eat egg) There are some good vegan sausages. My adult dc like Plant Pioneers caramelised onion shroomdogs.

TBF, it's a community outreach thing and OP says it's a gesture of appreciation. In those circumstances I'd just be happy I'd been thought of at all.

In a restaurant its annoying but as a gesture of goodwill then I'd be fine with it.

Yep, I agree with everyone else - Linda maccartney or other accidentally vegan sausage. And I say that as a veggie not vegan. Way easier for you to prepare too I would have thought.

The veggies can have the avocado and tomato? I'd be fucked off if only the vegans had that lovely sandwich and i had boring greasy, smelly old egg!

Noooo. Vegetarians hate being bunged in with vegans!

OP - we have Breakfast of Dreams in this house which is:

Halloumi
Mushrooms
Mini omelette/fried egg

All in a pitta/roll or just on a plate. The meat eaters add bacon.

It's honestly amazing.

I'd like egg, maybe with a bit of cheese as I'm not a fan of fake meat (I'm vegetarian because I don't like meat rather than moral reasons). I do like avocado but only on toast, it would be lacking texture in a soft roll.

Ok, I think I’ll go bacon, vegan sausage, avocado & tomato. I’ll do plenty of everything so it doesn’t matter if meat eaters want veg options. I know I could simplify to 2 options but I know both meat substitutes and avocado can divide people.

As people have pointed out, this is a gesture of appreciation not a restaurant! If people find nothing they like the coop is round the corner so they can grab themselves something else.

I’d do whatever is easiest for you. To me that sounds like veggie sausage suitable for vegans and therefore veggies. You won’t please everyone as this thread shows, but you’re doing it as a volunteer, so you may as well keep it simple and at least please yourself. I say that as a vegan that doesn’t eat the fake meats often, but would appreciate any effort made in this situation.
