Vegetarian breakfast sandwiches

I’ve volunteered to provide breakfast sandwiches/rolls for a working group on a community project. It’s a token gesture of appreciation, rather than a feast, so plan to keep it to trays of bacon rolls, tea, coffee and juice. I will obviously also provide a veggie, vegan and gluten free option. GF I have separate rolls and will ensure no cross contamination. For the vegan option I was going with smashed avocado with chilli flakes and grilled tomatoes, which leaves the veggies. I’m thinking fried egg rolls but wonder if a meat free sausage would be better received. Any thoughts?

Somehow missed the part about it being a volunteer thing. I wouldn't be insulted at all if the only option was fake meat and would happily pop to the co-op to sort myself out.

As a vegetarian if the options were, as some here have suggested, avocado or bacon then I would have the sum total of nothing to choose from.

Fried egg roll, with grilled tomatoes (!) would be my choice or vegetarian sausage the Cauldron ones are the ones I personally prefer their Lincolnshire and Cumberland ones are not vegan as they include eggs in the ingredients.

Why not give the veggies the vegan option? I'm vegetarian and your vegan option sounds lovely. Are there definitely GF/vegan people going to be there?
This attitude I HATE! Not all veggies are vegan! This nonsense is alllll over the menus in restaurants & pubs - just a vegan option or meat! 🤦🏼‍♀️

Linda sausages remind me of cleaning out the cat litter tray. They're 1980s veggie food. Richmond vegan sausages are 100x better.

I'm a vegetarian and in this situation I would just be glad that a volunteer was giving me some food for free as a thank you gesture, I wouldn't be making a fuss about it being vegan. It's a totally different situation to a restaurant menu.

TBF, it's a community outreach thing and OP says it's a gesture of appreciation. In those circumstances I'd just be happy I'd been thought of at all

The vegan option does not do it for me, OP. It will be lacking in protein and soggy.

I don't think you'll ever find a veggie sausage that suits everyone's tastes. I don't mind the Linda ones, the Cauldron ones are my favourites. I had high hopes for the Richmond ones after seeing the many glowing reviews on here, but I thought they were revolting, both the taste and the texture.

I am vegetarian. I hate being bunged in with vegans at restaurants.

OP is doing this as a kind gesture, having lots of different options makes it a faff and expensive.

I agree which is why I think her first idea is the best - bacon rolls, egg rolls and avocado rolls enough choice there as far as I'm concerned, less expense and less faff I would have thought.

Although I wonder if it might be simpler to offer bacon, tomato and avocado rolls for everyone but offer turkey bacon (just in case there are people who don't eat pork) and vegan bacon. You could offer croissants for anyone who doesn't want the 'bacon' option.

OP It's really good and generous of you to offer to do this cooking. But can I please just say this?
As a very old - as in, for decades - vegetarian, I can only say that I hate fake meat/fake suasages and Quorn products make me ill. I know I'm not the only one to feel this way. All those fake meat things are over-processed rubish and very unhealthy and very expensive for what they are.

I also agree with earlier poster that avocado on soft rolls would not be good. Also, avocado is very un-environmental, and rather goes against the reasons why lot of people are turning to a more plant-based diet.

If soft rolls were the only option, I'd rather like fried mushrooms and onions. With a bit of dried thyme sprinkled in. You could even add finely-sliced fried courgettes. Or fried tomatoes - though personally I don't like them. If grilled/fried halloumi - or grated mozarella that could be heated enough to melt - eg under a grill - were available as an extra, that would be a real bonus, but not essential.

For really simple and cheap and I suspect popular option, beans on toast with additional fried onions and/or fried tomatoes and/or grated sharp cheddar would be good.

But to repeat my selft, it is really very good of you.

Vegan sausages would make me barf (sorry but they do - I think it’s some thickener they tend to use). Egg would be nice but I hard to keep warm?

I love avocado - also banana and honey sandwiches.
