Trying to do my own shopping list & need some meal inspiration!

Oh I love these threads for ideas.

We batch cook twice per week. We currently have chicken meatballs with broccoli and a lemon chicken soup in the freezer which we will have at some point next week.

I cook for the first part of the week on Monday and I am planning on making:
Split pea soup
Lentil Soup
healthy raspberry muffins
Egg bake
A giant salad

On Thursday I will do:
Slow cooker pot roast and veggies
Quinoa salad (adding in olives, diced peppers, kale, parsley and tomato and feta).
A giant salad with carrots, radish, etc.
Maybe a flank steak and or chicken to get through the weekend.
Some type of muffin or bread.

This will cover all dinners and lunches and some breakfast.

This has been great! I might resurrect next Saturday for more ideas. I really need to get out of my current menu rotation.
I love these threads. I pick up ideas and some ideas from MN have become firm favourites.

Am going to google a recipe for the salmon, ginger and chili fish cakes mentioned up thread. My fish cakes are too like dollops of fish pie for my liking. Those sound much nicer.

Oh I also like to do a kale and basil pesto and just keep a large mason jar of it in the fridge to use on pasta, fish, prawns.

Absolutely brassic this week so using up freezer and pantry:
Sunday: homemade pizza
Monday: Fried gnocchi with bacon and broccoli
Tuesday: leek and potato soup
Wednesday: Prawn and veg egg fried rice
Thursday: pasta bake
Friday - payday so probably have fish and chips

Remus, basically, you boil some potatoes and cut into bite sized pieces. Then you chop a couple large onions and saute them in garlic oil until soft, add sliced hotdogs, either veggie or meat ones, and add them to the pan. Fry until they start to brown around the edges. Add the potatoes and keep cooking for a few minutes and then add about half a jar of salsa and heat through. Check the seasoning and serve hot with bread and butter. It's much loved in this house.

w- fish tacos - wasn't concentrating when I did the plan as tacos/burritos too similar, but the shopping is here now
t - burritos again (always do one double-cook)
f - bolognese (did a four-dinner batch a couple of weeks ago and froze)

This is on my magnetic meal planner on the fridge - it starts on a Saturday (as I do my Aldi shop first thing having planned my meals on Friday night).
Sat (last night) - Toad in the hole, mash, carrots and peas (onion gravy)
Sun - today - roast (chicken and all the trimmings).
Mon - Monday Pie (this is leftover chicken, veg, stuffing, roast potatoes) mixed with left over gravy and covered in puff pastry. Served with broccoli.
Tues - slow cooker meatballs (slow cooked in passata, onions, garlic, herbs and diced celery/carrot) served penne pasta
Wed - meat free day - Spanish frittata and salad
Thursday - slow cooker chinese sweet/sour belly pork slices with rice
Friday - Salmon, buttered new potatoes and veg

God I’m sick of meal planning, I want someone else to worry about it for a while.

I’m absolutely fed up of meal planning and cooking at the moment - which tends to happen as the seasons change, so this thread is going to be useful next week!

I'm fed up of thinking up things for tea at the mo. No excuse either as it is just me and DH.
I've got Nadija's chicken schwarma on the menu this week, with a cassoulet, some salad/ham/pork pie type effort, steak and mushrooms and then a tea out somewhere. Roast dinner. Everything makes leftovers for work lunches.

  • lemon chicken and cauliflower rice
  • cod burgers and a side salad
  • chicken pesto pasta
  • salmon ceasar salad

Pho tomorrow with leftover chicken.
Chicken fricassee on Tues with leftover chicken.
Spaghetti carbonara on Weds.
Mushroom risotto on Thurs.
We have a guest on Friday so may do a curry (DH makes a massive batch of base sauce that we freeze in individual portions).

I’m in a real can’t be bothered to cook phase at the moment, so not liking the odds of cooking all these meals when I live on my own.

We don’t meal plan really, dh buys whatever meat looks good at the butchers on a Friday for the coming week which is also the day the regular food shop comes. I order the staples, potatoes, veg, cheese etc and then we just shop according to what we want to eat that day. Well, he does. I don’t!
This week we had steak on Friday, made pizzas last night, bbq today.
Tomorrow we will either have something to do with a chicken, homemade burgers or tuna steaks. Probably pulled pork one day as he bought a shoulder.
Food shopping bores me. I don’t cook, dh does so I never know what to get because he doesn’t like to plan too much in advance.
I do like the eating part though Grin

Roast stuffed chicken breast tonight with leftovers and re- air fried roasts and veg tomorrow.
Healthy salmon en croute ( made with filo and a paste made with low fat philly with chives and curly kale) new potatoes and veg
Frozen breaded haddock with air fried chips and peas
Spag bog
Healthy home made pizza (lots of veg, home made pizza sauce and low fat mozzarella) with salad.
Chicken stew (usually make this with any veg I have in the fridge and a splash of red wine )
Thai green chicken with home made filo spring rolls cooked in the air fryer.

Can you tell I like my air fryer? Smile

We have to be very careful with DH s diet as , although he is as skinny as a rake and low cholesterol in blood tests, he has a congenital heart issue meaning that he is prone to hardening of the arteries so we have to have a very low saturated fat and salt diet.
