Got Covid so CBA

DS making me a DS salad special involving Korean grains, avo, sun dried toms, feta and a load of mess for me to clear up no doubt

DH getting a takeaway for tonight

And tomorrow is another day will think about that then

Have some eggs and veggies.....

Mine for the next week.

Cottage pie, veg.
Macaroni cheese, wedges, broccoli.
Baked potato cheese / beans.
Sausage mash veg.
Lasagne, garlic bread.
Spag Bol.
Omelette, potato wedges, salad.

Struggling for motivation at the moment, CBA to cook after work and don't really fancy anything, must be the time of year!

Today - out for tapas
Sun - roast chicken
Mon - Stir fried veg, noodles
Tue - Pork & pineapple Adobo
Wed - Salmon & rice
Thu - Massaman style tofu buddha bowls
Fri - Peanut butter chicken curry
Sat - Fajita pasta bake
Sun - Gammon, roast new potatoes, cauliflower cheese

Creamy sausage meat pasta with salad.
Slow cooked chicken thighs with veggies and gravy.
Meatballs and Spaghetti.
Burgers with salad.
Paneer curry with sides.
Baked feta with cubed potatoes.
That's what's happening this week. God knows in what order.

Spaghetti with garlic prawns, chili, roquette, grated lemon, sundried tomatoes and Parmesan (Jamie Oliver recipe).

Home made chicken nuggets (mix natural yoghurt with a curry paste, mix dried onions with breadcrumbs - coat chopped up chicken breast in the yoghurt/curry mix then in the dried onion/breadcrumb mix - spray with baking oil spray - cook in oven) and chips.

Vegetarian shepherd’s pie (roasted butternut squash, onion, black beans, red peppers).

Fish tacos (white fish with taco seasoning, spicy lime slaw, Guacamole and a green sauce (yoghurt with coriander).

Some type of past bake.

Slow roast lamb and ratatouille for lunch tomorrow then freezer tea
Monday chicken nuggets and chips
Tuesday pasta of some kind garlic bread and salad
Wednesday teriyaki salmon rice and green beans
Thursday beef tacos
Friday probably pizza!

I’ve just got the Joe Wicks book so am trying a few of those recipes.

Today is halloumi & pineapple burgers with coleslaw, chips & corn on the cob
S - baked squash risotto with cheesy broccoli
M - salmon with pineapple salsa, veg & rice
T - Mediterranean veg & salami gratin served with salad and garlic bread
W - courgette pasta
T - baked tomato risotto

Tomorrow a free range chicken from the farm shop, I left a kidney in return. Grin
In fairness we will get three dinners from this, roast, stir-fry, one or two chicken mayonnaise sandwiches and then chicken stock for risotto and we will add peas and asparagus to this.

Monday - Pan fried salmon which has been marinated in soy, honey finely chopped ginger and sesame oil, with jasmine rice and black sesame seeds with a warm teriyaki sauce on the side with green veg.

Tuesday - Chicken fatty eaters, home made guacamole, shop bought salsa, etc.,

Wednesday - WIll pop to the butcher and get some lamb chops

Thursday - Scallops with pureed garden peas and crispy parmentier on the side. However This is a moveable feast as I have normally had enough by Thursday, last Thursday DH was offered a toastie and I directed DS to the selection of spanish meats in the fridge. Grin

Friday night every man for himself.

I am beyond bored with meal planning also!

I am going really simple this week.

Tonight we are out.

But what we have in the fridge and cupboards mean we will probably have;

turkey schnitzel with potatos and peas and apple sauce

lamb korma (in freezer but sauce from Aldi)

spagetti meatballs

chicken pasta bake or chicken cooked in mushroom cream sauce (ahem- tinned mushroom soup) with rice

tacos with black beans and mild chilli.

Chicken kebabs with wraps, sweet potato fries and salad
Roasted veg Brussels,cauli,peppers,onions, then mix with a packet of mixed grains drizzle mint and yoghurt sauce over
Cheese and ham panini and salad few crisps.
Soup/on toast/supernoodle etc
Sticky Beef noodle bowl lots of veg

Mon - salmon, chilli, and ginger fishcakes with noodles
Tues - busy evening so something out of the freezer! Or a midweek takeaway
Weds - mozzarella and mustard stuffed chicken breast, tomato rice
Thurs - spinach and sweet potato curry
Fri - spag bol

Mon - salmon, stir fry veg & rice
Tue - beef stew pie with sweet pot topping
Wed - veg curry & rice
Thur - poached eggs (just me & the kids who will have had hot meals at school/nursery)
Fri - chicken & chickpea curry
Sat - fish pie

Chicken Curry

We only ever grocery shop for 5 nights because we go out for dinner on Fridays and there's normally another night during the week that we're busy or lazy and end up getting a takeaway or throw on a frozen pizza.
