You can make these amazing parcels of savoury filling using thing crepes! You put the filling and close it like a square envelope and cook it again in the pan, it’s delicious 🤤 you can use whatever you fancy, bacon and spinach and cheese, blue cheese or ricotta, anything really.

For savoury pancakes only buckwheat galettes with gruyere and bayonne ham, topped with a poached egg and salad, like they serve it in Normandy.

I love lemon and sugar, but I'm off sugar, so this morning we had pancakes filled with chopped ham and grated cheddar.

Nutella and roasted chopped hazelnuts - like a giant Ferraro rocher 😋 or lemon and sugar.

On American pancakes it’s always butter, maple syrup and smoked crispy bacon, ideally with some strawberries and bananas on the side too - hedging my bets!

Sweet pancakes usually just lemon and sugar but if going all out I love stewed apple and vanilla ice-cream.
For savoury it has to be cheese and spinach.

I made buckwheat pancakes the other day with cheddar (melted on the cooked side when you turn them over) and homemade guacamole. It was a bit if an emergency ‘what have we got in to cook meal’ but was surprisingly good - going to do it again.

For American style breakfast pancakes it’s got to be proper maple syrup. With berries to make it less sickly.

I like the concept of lemon and sugar but don’t like crunchy sugar.

Lemon and sugar, but I’m also tempted to have some crepes Suzette style - sauce of butter, sugar, orange and lemon juice, plus orange liqueur. Two each for me and dh, folded into quarters in the sauce. Yum.

Another one in the lemon and sugar camp. I do like a nutella and strawberry one but only with nice, in season berries so that has to be a summer treat.

I’m with the lemon and sugar gang too, bought lemons yesterday. However those thin Crepes are lovely but my son prefers a thicker American type pancake but I can’t make them not sure what I do wrong so if anyone out there has a good recipe and some hints on how to make really good pancakes I’d be v grateful 😊
Now v hungry
Savoury crepes I’ve had were chicken with a creamy sauce with tarragon in, they are delicious

Speculoos spread. Divine.

Although I have a Xanthe Clay recipe that has a creamy smoked fish and spinach filling with cinnamon and spinach and parmesan in the pancakes that is also exceedingly delicious, so it was a close call.
