Don't know what to cook already had a roast dinner in the week don't fancy another one.

What are you cooking? Looking for some inspiration before I pop to she shops.

Kids have just had chicken pie, crinkle cut chips, broccoli, peas and sweetcorn.

I will have a marmite toastie & chocolate of some sort when they're in bed.

We’ve lamb pinwheels from the butcher’s with roast potatoes & parsnips, peas, cabbage and gravy. We’ve got treacle tart and ice cream for later

Chicken pie with the leftover meat from yesterday’s roast, mash, kale, peas. Jam tart and custard for pudding because I made too much pastry and it needs using (I may have made too much pastry on purpose). I am in full autumnal comfort food mode!

Pulled out a sausage aubergine pasta bake from the freezer for the kids, and DH and I are eating a 35 piece indian bites party food tray. I am all out of cooking mojo for the week!!

Roast chicken dinner.

Unfortunately chicken was already defrosted and need it for other meals, otherwise I'd have been happy with toast and biscuits (no appetite).

Slow cooked beef with red wine gravy, roasted potatoes and carrots, mashed potatoes and broccoli. It was delicious

It was supposed to be roast pork dinner, but due to a fruitful walk yesterday it was pasta with foraged chanterelle mushrooms, bacon, spinach, onion, garlic, gouda and cream sauce. And I wasn't the cook. Win, win.

I've got a mushroom, barley and chestnut stew in the slow cooker and homemade bread, but I've put too much stout in the stew and it tastes tinny. Don't know how to rescue it.
Aside from the over pour of stout this sounds lovely. Any chance of a recipe please?

It's a bit of a judgement call, but today I made a pint of white sauce for about 600g of chicken.

White sauce:

Melt 50g butter
Add 50g flour, stir and cook the flour out for a few minutes.
Take the saucepan off the heat and very gradually stir in a pint of milk.
Return it to the heat and bring up to the boil to simmer for about 5 minutes.

While it's coming back up to the boil, fry off about 600g chicken in strips or chunks, and a finely chopped onion and some crushed garlic. Brown the chicken all over then tip it all into the white sauce and allow to simmer for about 10-15 minutes to finish cooking.

I cracked at this point and added black pepper and nutmeg because the sauce seemed so bland!

But the idea is you put a strong flavour in with it for other dishes - cheese in chicken and broccoli pie, pesto and leeks in chicken and leek bake, chicken stock if you're making it into soup, mushrooms and herbs for chicken and mushroom pie etc.

No DH for food tonight, just myself and I've just had a meal I only cook once a year in memory of my lovely dad. Sausage, egg, chips and beans, although slightly more upmarket versions than dad would've chosen and definitely not fried, he would've laughed at my posh Sausage and fancy chips.

Sautéed 2 x red onion, lots of garlic, 2x carrot, 1/2 swede, 2 packs mushrooms, a few small baby potatos, added in too much stout, fresh thyme, meat free oxo cubes, bay, white pepper, water, marmite, pearl barley, 2 x packets pre cooker chestnuts. Slow cooker for 5 hours.

Also added in tomato puree and chopped dried apricots to get rid of funny ale taste as advised. Apricots really nice!

Purple sprouting broccoli. Sadly I have never persuaded it to keep its colour, no matter how carefully I cook it.

We had pork tenderloin wrapped in bacon , pan fried and then finished in the oven with roast potatoes , sage and onion stuffing and broccoli and gravy. We usually have it with a peppercorn sauce but I didn't have any cream.

The smoked mackerel gratin sounds great - I'm going to try that.

Steaming, yes @TuftyMarmoset, but never stirfry. I'll give that a go!
