What's for dinner? The meal plan version

I am determined to stick to y meal plan this week. I need to be more frugal.

Tonight - Poached chicken with vegetables (I am trying a proper poule au pot).

Tomorrow- Freezer surprise (which I think will mean salmon and veg for me and pizza for the DCs)

Tuesday - Tuna fishcakes with peas and honey sesame carrots

Wednesday - corn chowder

Thursday- freezer surprise

Friday - Roast beef with all trimmings.

I am also planning on buying mini marshmallows and glace cherries and squirty cream to make ice cream banana sundaes.

mmmmmm.

Tonight- roast pork, potatoes, parsnips, green beans, swede and stuffing for with gravy

Tomorrow- spaghetti and meatballs

Tuesday - pork and parsnip traybake

Wednesday- beef & ale stew in the slow cooker

Thursday- butternut and bacon fusilli

Friday - gammon, egg & chips

I'm going to go through the freezer, chuck some stuff which has been in there for far too long and start to be more organised!!!

Tomorrow: broccoli risotto
Monday: meatballs and spaghetti
Tuesday: fish pie
Wednesday: chilli in tacos
Thursday: Butternut and ginger soup
Friday: pizzas

Tonight is chicken noodle soup as DH did roast chicken last night so using up leftovers.
Tomorrow night DD2 cooks, generally veggie and she does her own shopping.
Tuesday is chicken fajitas from Marley Spoon.
We are in lockdown so Wednesday is support a local restaurant night for home delivery.
Thursday is another Marley spoon recipe but that can be pushed to Saturday if there are enough leftovers from Tuesday and Wednesday (generally there are). I like the idea of a freezer meal for this as well, I am going to steal that idea.
Friday is pizza ( love my air fryer pizza attachment). Meat lover for DH, veggie for DD2 and ham and pineapple for DD1 and me.
Saturday or Sunday DH will cook. Marley spoon meal of roast.

Tonight - flatbread pizzas to use up the flatbreads I bought for a dinner party last weekend but didn’t need
Tomorrow - chicken curry which will also do Tuesday and Wednesday’s lunches
Tuesday - takeaway at a friends
Wednesday - Pinch of Nom keema pie (also next 2 days lunches)
Thursday - Simplycook Korean chicken meal pack from Tesco
Friday - Pinch of Nom bolognese risotto

@FizzyPink just googled the pinch of nom bol risotto. Looks good but does it actually serve 4 people? The amounts look small (which I know they would be as it's a diet recipe). Thinking of cooking for 2 hungry teenagers and dh and wondering whether to tweak amounts

I just make my corn chowder up as I go along really.

Diced onions and celery in a mix of butter and olive oil

  • add diced potato
-add chicken stock or good veggie stock -add a little bit of tarragon -add tinned corn (or if available a small tin of creamed corn)

Then when it is all cooked I take about half the soup and blend it then return to the pot

I often mix in a few tablespoons of cream, but this depends on if i want to keep any for the next day. i will add cream to each individual bowl then.

I really like it, and everyone in the family eats it (or at least, fussy DS1 will eat if if he can have garlic bread on the side and dip it into).

I think some bacon in it would also be really good. :)

Wednesday - pizza
Thursday - bean stew with pork
Friday - amatriciana

I use a notepad app which I have as a widget on the home screen of my phone so it's easy to add things or change things around as I think of stuff or realise there is something that needs using up in the fridge. I tried some proper apps but don't need something so complicated and the most important thing for me is being able to see it really easily so it's at the front of my mind regularly.

Monday: fish cakes veg. Probably peas, sweet corn and tenderstem broc.

@ThorIsAGod in your situation I would probably up it as it’s only 333 calories per portion. I’m on 1200 calories a day so it’s perfect for 1 portion for me, 1 for DP and then 2 lunches for me but I do also serve DPs with a side of garlic bread as he’s a stick and trying to put on weight

Would really recommend the Italian veg soup, I make it all the time. It's a bit like a minestrone really.
