Pull apart garlic bread
Takes time, but easy, and has always received comments and requests for the recipie (bread dough, in small balls, coat in melted butter loaded with garlic powder and parsley, tip into a cake tin, leave to rise for an hour, and then cook for about 45 mins, covered for the first half, at 180C)

Sleepingdogs12 · 01/04/2021 19:40

I have done nachos before ,checking i can use the grill when I get there. Take tortilla crisps , load of grated cheese, and the other toppings. Throw it all under the grill in your own serving dish.

Oops maybe doesn't fit the impressive criteria !

I always do a cous cous salad when having to transport a buffet dish. Roasted veg roasted in olive oil with loads of paprika, add a bit of cumin and onion granules. When cool, chop small, add sun dried tomatoes and olives, gently stir through with cooked cous cous in a wok to colour and flavour the cous cous with the spiced oil and veg. When cool again, add diced feta.

Can't wait for barbeque season!

caramelised leek, onion, walnut and goat's cheese tart. Easy to prepare in advance and just as lovely hot as cold.
Noodle salad with a peanut dressing: lots of diced crunchy veg (radishes, red onion, red pepper, celery, red cabbage, carrot and peanuts) cold noodles with a dressing of peanut butter, fresh ginger, garlic, chilli sauce, honey, soy sauce, sesame oil, lime juice and salt. The only faff is cutting all the veg, but it's so delicious.

Charcuterie board- you could do savoury or sweet with a mix of homemade and shop bought 'bits'

Add fresh fruit and veg like grapes or apple
You could do cakes, pastries and fruit tarts or sausage rolls, fresh bread and olives.

I'd say savoury palmiers.

I do bacon, chutney and cheese - delicious!

For sweet, I'd do a tray bake or cupcakes.

Chilli or biryani is easy to transport and never spoils whilst serving.

LadyMonicaBaddingham · 01/04/2021 19:59

I always make either brown rice salad or coronation chicken (more often than not both) if I'm going to a potluck.

This sounds delicious....is there a recipe somewhere for the dressing (just to get the amounts right)

Roystonv · 01/04/2021 20:18

Seconding the liking of the noodle salad, sounds yum

Small meringues sandwiched together with whipped cream and Nutella.

Meringues can be made days in advance and assembled in minutes.

IME people at a buffet are on the lookout for meat, so a shiny homemade pork pie with hard boiled eggs will be a hit. Very easy to transport.

Panzanella salad where chunks of dry ciabatta bread soak up the tomatoey oniony mustardy juices. I take this to barbecues and ignore the meat.

If it’s high summer, a huge watermelon cut into slices on the spot makes a great show.
Or a simple tiffin chocolate biscuit cake, kept in the freezer until you set off.

Medium cheddar and juicy pineapple chunks on luxury cocktail sticks, displayed on a organic baking potato lovingly wrapped in the best quality tinfoil.

Chicken biryani (the only thing I cook well according to hubby and kids) work think I'm a good cook but haven't realised I can only cook one dish

AudTheDeepMinded · 01/04/2021 20:32

@Hellcatspangle @Roystonv

Can't rememebr where I got the recipe from and I've adapted but I put in:
fresh ginger, about half my thumb length
1-2 cloves garlic
2-3 Tbsp peanut butter
3 Tbsp lime juice
2 Tbsp soysauce
3 Tbsp honey
3 Tbsp Sesame oil
a squirt of sriracha (or other chilli sauce)
1/2 tsp salt
Blitz in a blender and add a bit of water to loosen if it is a bit thick at the end. should be like thickish soup.
Enjoy!

I cannot think of many things that people I know would be less likely to eat

TheYearOfSmallThings · 01/04/2021 20:59

Peaches and raspberries poached in prosecco. So quick. Lots of recipes serve with a flavoured cream but I prefer with amaretti biscuits.
