For a low key do happening in the Summer. I dont want to faff too much. I havent decided savoury or sweet. Whats your go to recipe? Ps I dont mind buying ready made😂

Fellow veggie here, fully agreeing with you. If consulted re veggie choices I always politely request that they over cater for veggies as the meateaters pile their plates with everything and then we are left with some solitary chicken goujons, satay sticks, and whatever sad bits of salad garnish have been left on the meaty thing plates!

Traditional buffet fare.
Not hard boiled eggs on their own, although keto people would probably be delighted.

Baklava is surprisingly easy to make and is a good buffet pudding.

Cheese straws or mini puff pastry tartlets always go very quickly.

My easy buffet contribution is Mary Berry's lemon and ginger cheesecake (and I don't usually like cheesecakes). 10 minutes to assemble (no baking), fairly indestructible in a quiche dish, add the fruit on top when you get there.

It's extremely rare to meet meateaters. Most people are omnivore, and expect "veggie" option just as much as a meat one.

So yes, it makes sense to ask for more vegetarian choices, I am yet to meet someone sticking to meat only, ever.

Fig and Gorgonzola flat bread. Sprinkle on rocket and add a drizzle of honey for extra ponciness. Basically it’s a fancy pizza.

Any version of paella with a few big prawns in shells on top, and maybe chicken wings/small drumsticks as well.
Or just buy a few packs of cooked chicken wings/drumsticks, remove from packaging and garnish.

My buffet makes are

Pork and apple sausage rolls
Roasted vegetable couscous salad (bbc good food)
Coronation chicken
Waldorf salad with roast chicken
Devils on horseback
Salad of torn burrata, pesto, avocado, beef tomatoes, pine nuts and nice oil - lots of black pepper and finely sliced fresh basil

Salade Niçoise looks colourful and interesting, and is easy to transport in a lidded bowl. Take the dressing separately and add just before serving or serve separately.

Chicken Caesar salad is quick and easy, (you could get a ready cooked chicken) and easy to transport.

Open Rolls with a selection of Luxury fillings, using Artisan baked finger rolls, slit along the top, but not right through, buttered and filled with Prawns Marie Rose, cucumber and lettuce. Roast beef and Red onion pickle, Turkey and Cranberry, Smoked Salmon fresh Pate, with ribbons of smoked Salmon and a varnish of Dill. Egg Salad and Mayo, or Tuna, Sweetcorn Mayo, with cucumber.

Individual Strawberry Trifles, made in cups for easy service, or small drinking Glasses if at home.
Home made Irish Coffee Liqueur Cheesecake, just soft Cheese, Whipped Cream, Baileys, biscuit base, Chocolate shards for Decoration, and 'Bake' in the fridge until set!

This whole thread is making me hungry.

My family likes a chicken pasta salad. Bake chicken thighs/breasts in cider and meanwhile cook some pasta. Toss the pasta in the juices, and add diced avocado, pepper, tomatoes (or sundried tomato is nice), plus lots of parsley/rocket/basil, until you've got roughly 2:3 ratio of greens/veg to chicken and pasta.

Thai beef salad. Take salad in one bag, cooked sliced beef in another, and dressing in a bottle, chuck together when you arrive.
It’s also really good if you substitute tuna instead of beef (if so you cook the tuna for exactly 30 seconds on both sides so that it remains deep pink right on the middle).
For either beef or tuna, marinating in lime juice and sugar for 24 hours before cooking takes flavour to a new level (some recipes forget this step).

Meanwhile make the dressing of sour cream, chopped gherkin, chopped parsley, chopped spring onion and season to taste, when potatoes are luke warm toss potatoes in dressing (works better than cold I find). You can add cubed ham but I serve separately due to vegetarians in the family.

Easiest thing to do with no prep what so ever is a cheese board! Grab various lovely cheeses and green and red grapes,Unwrap when there. Few packets of nice crackers etc and you have cracked it! Totally transportable and no fuss!
