what can i do tonight with chicken thighs?

I am bored with my usual recipes. I usually do;

chicken cacciatore
creamy chicken casserole
chicken pasta
honey soy sesame chicken with rice
stuffed chicken thighs (cream cheese, spinach and sun dried tomatoes
chicken nuggets

I'd love some new ideas!

I say ish as I think you can be a bit loose with the recipe depending what you have in

Lemon and garlic.
Brown the chicken in a little olive oil with plenty of salt and pepper. Chuck in a sliced lemon and 2 cloves of garlic, sliced. Turn the heat down low, put on a tight fitting lid. Leave it for at least 45 minutes till tender. Serve with rice and green veg. Easiest recipe ever.

I use the spices from this recipe but make it with chicken thighs or a whole bird.
I rub the thighs in the Harissa and spice mix and then roast them with onions, peppers and pine nuts and cut lemons. When they are all cooked I make the couscous in the pan with the pan juices, squashed roasted lemons and stock.Then add the roasted veggies back in once the couscous is cooked. I add a load of pomegranate seeds and fresh mint and serve. Absolutely delicious!

Chicken and Mozzarella.
I usually cook 2 chicken breast or a few chicken thighs in oven for around 20 mins in ovenproof dish. While this is cooking fry an onion and garlic, add a tin of chopped tomatoes and veg stock with about 250ml of water. Once bubbling simmer for 5 / 10 mins. Now pour tomato sauce over chicken. Add sliced mozzarella all over top and bake for about 20 mins until cheese has melted and chicken is cooked. Serve with pasta, vegetables, salad or whatever you choose. It's delicious!!

Serve with chickpeas (chuck in for last few minutes of cooking) and cous cous

I just throw some chopped chorizo. New potatoes, peppers, carrots, red onion, cover with orange zest and a bit of juice and oregano and stick it in the oven

One of our favourites is chicken souvlaki with Greek salad. I don't make them kebab style, I just do the chicken thighs whole marinated in lemon juice/oregano/garlic and do them on a griddle pan to crisp up then finish in the oven. Can do some sort of potatoes to go with it.

Teriyaki? Garlic, ginger, chilli, soy sauce and oyster sauce. Lovely and sticky served with noodles.

I love Nigella’s chicken shawarma. It is so, soooo tasty but super simple.

For the sauce, often I just use shop bought hummus, maybe stir a little plain yoghurt and lemon through it to thin it out a bit.

I did one yesterday!
Brown chicken thighs soften and onion and add a couple of cloves of crushed garlic. Add 10ml of water, bbq sauce and 250g pasta.Then a tablespoon of sugar and the juice of a lime. Let it simmer for about 6 hours and the serve with rice, pasta or chips.
