what can i do tonight with chicken thighs?

I am bored with my usual recipes. I usually do;

chicken cacciatore
creamy chicken casserole
chicken pasta
honey soy sesame chicken with rice
stuffed chicken thighs (cream cheese, spinach and sun dried tomatoes
chicken nuggets

I'd love some new ideas!

I like chicken thighs with a jerk chicken rub.

Put them in chicken tights.

Chorizo, aubergine, mushrooms and any other veg clopped up. Tin of tomatoes and chicken thighs on top. In the oven and serve with rice.

This is a favourite here. I do a mixture of legs and thighs.

I've got this on the go at the moment. Dead easy to make but never done it before so no sure how it will taste!

I love this French chicken recipe - bacon, peas, lettuce and creme fraiche. It uses boneless thighs but you could use ones with bones in and cook for longer

I did jerk chicken thighs last night with a carribean slaw and rice and peas, twas delicious.

I’m making chicken chilli tonight.

Boneless
Open them out, whack them flat, dip in seasoned flour, egg and breadcrumbs. Fry or oven bake for chicken schnitzel.
Open out, marinate in peri-peri sauce, cook and serve in pitta bread with salad and sour cream, with rice (I cheat and use microwave Mexican spiced rice).

Boned
Brown with onions and garlic. Remove and fry off risotto or paella rice with some white wine, put chicken back in, add whatever veg(peas, green beans, red pepper are good) if using mushrooms add for last 10 mins only. Add chicken stock, the juice of a lemon and throw in the lemon skins and some herbs, add lid and into oven for 30 mins. Even more amazing with butter beans instead of rice as they soak up all the flavours.
Push stuffing or sausage meat between the skin and meat for mini roast.

Chicken thighs are my favourite food - so many great ideas on this thread I'm going to try.

Get yourself a little pot of Dukkah (a sort of Middle Eastern spice/nut/seed mix - it’s next to the spices in Waitrose) then mix with a little olive oil, coat the thighs & pan fry to golden. Serve with cous cous, yogurt mixed with some lime juice & a pinch of salt & scatter some pomegranate seeds over. Completely delicious & quick & easy.
