What's your favourite wfh lunch

I'm after new ideas. I've never been good at bringing lunch to work (absolute fortune since wfh)

Working from home however, I get bored easily and either end up with a cooked something, normally egg, or bacon sandwiches or I pick pick pick all day.

My favourite days are when my meetings are timed just right around lunch, to pop down early enough to put jacket potatoes in, but not at risk of not being able to check on them. Served with tuna mayo or beans and cheese.

I’ve been making quite a lot of healthy(ish) pasta dishes for tea, with loads of veg. They keep well for a couple of days afterwards for lunches.

I also sometimes make a big batch of lentil dhal on a Monday, which is really filling. On days when I want more protein I usually have an omelette or scrambled eggs on toast.

I’m also partial to a fish finger butty Blush

M&S do lunchy bits for 3 for £7 so something from that with some salad, remember noodles, soup, grilled cheese sandwiches.

Usually it's just a sandwich or soup & toastie in between meetings, but on days where it's not such a rush, we have:

  • instant ramen noodles with a handful of veg & a poached egg
  • quesadillas (refried beans & cheese or cheese & jalapeño)
  • fish fingers, chips & peas (DD's request because school do fish & chip Fridays)

I often make up a tomato, mozzarella and avocado salad with a slice of fresh buttered bread.
I normally manage to organise my shopping to have that twice a week every other week.
Today is leftover Bolognese, with some freshly cooked pasta.

Toast a slice of crusty bread, spread with black olive tapenade, pop some parma ham and slices of mozzarella on top and then grill for a few minutes.

Jacket potato with cheese and salad
Sandwich and crisps
Cheese and veggie omelette
Bagel with philly and veg

I often make extra at dinner so I have leftovers. Sometimes I batch cook a big portion of pasta with roasted veg and pesto and that does me mon - thurs.

I made flatbreads, I wish I could remember what recipe as they are really nice, they had a higher yoghurt content and I think SR flour. I froze leftovers and we've just had them with home made hummus and yoghurt garlic drizzle, also left over from the weekend, rocket, tomatoes and thin sliced roast beef

I don’t eat breakfast and have a late dinner so like a filling lunch. Recently I’ve been enjoying:

Thin Bagel with slice of cheese toasted, plus mashed avocado, bit of chilli sauce and 2 hash browns or 2 fishfingers.
Chicken tenders or Falafel either in a wrap with coleslaw or on alone but with potato salad. Lots of variations on this sometimes but different salad bits like tabbouleh, fatoush, dolmades. Just like one hot element.
Potato waffles, toasted with an egg on top, beans too if extra hungry
Pitta bread pizza
Tomato Soup and cheese toasty
Stuffed Jacket potato, just make in advance and reheat.

I did also make a quick veg lasagne the other week, spent Sunday night in the fridge, baked Monday morning and I just ate that every day as new it would be a busy week.

Also like having leftovers from dinner so sometimes cook extra for this reason.

I say all this but I also walk to our sushi place at least twice a week. I can’t give up the nice lunches of office days.

I like making a salad in a bowl out of cucumber, radish, avocado, shredded Coz lettuce, sugar snap peas or mange tout, red onions, smoked mackerel and a cut up toasted pitta, and tossing it all in olive oil and freshly squeezed lemon with plenty of salt and pepper. Sometimes I also have a large spoonful of cottage cheese on the top. Yum!

I make big pan of soup to last 2 or 3 days, which we eat for lunch with bread. Yesterday and today we had pumpkin, celeriac and bacon.

Other favourites are tinned plum tomatoes on toast, soft boiled eggs, toast 'pizza '. (Bread spread with tomato puree then topped with grated cheese, mushrooms and onions then toasted).

When the weather is warm I usually have salad with tuna, egg or ham and ryvita.

Nothing particularly exciting but keeps us filled up until dinner time!

I like baked sweet potatoes with tuna, sweetcorn and spring onions.
Or Poached egg with grilled mushrooms and plum tomatoes.

If remember early enough can have jacket potatoes with coronation chicken / smoked salmon and / or corned beef.

Blue cheese, rocket and pear salad.

Smoked salmon on toast with scrambled eggs.

Poached egg on toast

Beans and cheese on toast

Avacodo with prawns in sauce.

Cheese ploughmans - bread, cheese, pickle, apple, onion or similar with smoked salmon.

The frozen Itsu gyozas and bao buns. I have to stop myself from buying them too often or I can eat a whole bag to myself Blush
