What's your favourite wfh lunch

I'm after new ideas. I've never been good at bringing lunch to work (absolute fortune since wfh)

Working from home however, I get bored easily and either end up with a cooked something, normally egg, or bacon sandwiches or I pick pick pick all day.

My favourite days are when my meetings are timed just right around lunch, to pop down early enough to put jacket potatoes in, but not at risk of not being able to check on them. Served with tuna mayo or beans and cheese.

Not very adventurous but today I had ham and egg mayo on a crusty granary roll....was bloody lovely too

Yellow mustard
Gherkins

Assemble, brush with melted butter and put in the toastie machine until golden brown. A family favourite, not just mine. I get a 'muuuuuuuum?' From DS(15) to get the stuff in (he makes his own if we're not all having them).

Today I griddled asaparagus and cherry tomatoes and put them on salad leaves then topped it with Burrata

One of my favourite lunches is not colleague friendly. Boil some pasta, drain, add red onion, chopped cherry tomatoes, cucumber and a tin of mackerel in tomato sauce. Stir well!

Spanish omelettes.

Nice salads

Rice boiled in chicken stock (I always boil my rice in stock), whilst its boiling cook some chopped smoked bacon, onions and chopped cherry tomatoes, once the stock is absorbed add the rice to the frying pan with the bacon etc (you do need a full hour as the rice takes about 25 minutes, I use 100g rice to 500ml and sometimes add a bit more water if needed)

I have soup - butternut squash or tomato and bean from the freezer, M&S chicken and rice, or anything else I fancy - it was Co Op minestrone today which is GF.
Ds(14) has the Itsu bao buns frequently, udon noodles in miso, omelette, sausage sandwich (I get a box of cooked mini sausages some weeks to allow this) and sometimes nachos

Scrambled egg on bagel (except it's not actually scrambled, it's just a microwaved egg that's still the shape of the bottom of the jug so sits on my bagel perfectly 😊). Sesame bagels are my new fave.
Salmon and penne pasta with sweet chilli sauce.
Leftovers from the previous night is always a winner.
Roast beef in sweet chilli and bbq sauce on sourdough.
Nice soups and baguettes

My fave lunch this lockdown has been leftover curry house takeaway butter chicken curry and pilau rice. And leftover peshwari naan. It was good on the day it was delivered. And even more yum when I had it for lunch. Yhmmm.

XXXXX on toast - mushrooms, tinned tomatoes, scrambled/fried/poached/boiled egg, beans, cheese - any of these or a combo of several.

Steamed veg with chicken breast or ham - steam in microwave and whatever I have in the fridge, usually a combo of asparagus, babycorn, mushrooms, green beans, mange tout and/or sugar snap peas. Add a small knob of butter, some spring onion/chilli/chives/salt/pepper.

Mini low cal fry up - 2 rashers back bacon, mushrooms, tomatoes, medium egg. Use fry light spray.

The TikTok eggy bread cheese & ham toastie thing is fab too.

I also love stir fry veg and a handful of chopped cooked chicken in a big bowl topped with an Itsu rice noodle pot.

Soup is what I’m supposed to have, or salad. What I actually have far too often is toastie in the air fryer. I particularly like granary bread, spread with M&S marmite cream cheese, farmhouse cheddar and finely sliced red onion.

The best lunch is leftovers from the night before but with extra veg instead of carb (eg leftover chicken curry with spinach)

Next best lunch is Keralan chicken soup from M&S

Salt beef bagel with a lot of salt beef

Super Noodles with whatever you have available, eg tuna, cheese, bacon, leftover meat etc.
Omelette.
Eggy Bread.
One of those Itsu Pot Noodle thingys. Very easy, and I think they taste quite nice.
Soup.
