Favourite toastie filling

I started a risotto recipe a couple of weeks ago and got some amazing ideas, and ice already tried a few.

So now I'm after toastie ideas! A lot less technical that risotto but still want to make them tasty. I always go for tuna and DH chorizo and cheddar. I'm thinking brie and bacon with some onion chutney??

Spaghetti hoops and cheddar. Have to be quite mean with the hoops and there's always a risk of not waiting for it to cool just long enough before eating and/or ruining your top, but so worth it!

My go to is chicken, tomato and mayo.

But I also like:

Cheese and pineapple
Chicken and curried mayo
Tuna and cheese

Not very adventurous, hoping to pick up some new ideas here!

Finely sliced pear, Gorgonzola and spinach.
Or in my less sophisticated moments, cheese, shredded gammon and crushed pineapple with ketchup.

Mozzarella and roasted red peppers. With a bit of pesto if you like it. Any other roasted veg also works well but peppers are the best IMO.

Mozzarella and thin layer of tomato puree - pizza toastie.

You can only make this after you've had an Indian takeaway.

Cheese and the chopped onions you get with poppadoms, and then when cooked dip in the mango chutney or mint sauce you've had with your poppadoms. Bliss

Dead easy. Just press down on the bread with a tablespoon and then crack an egg into the dint. Some black pepper and maybe some shredded spinach if you have some.
