Favourite toastie filling

I started a risotto recipe a couple of weeks ago and got some amazing ideas, and ice already tried a few.

So now I'm after toastie ideas! A lot less technical that risotto but still want to make them tasty. I always go for tuna and DH chorizo and cheddar. I'm thinking brie and bacon with some onion chutney??

Aioli, Serrano ham and some cheese (I’d go for mozzarella for it’s stringy quality).
Or just good old extra mature cheddar and red onion.

I don't think you can go wrong with cheese and beans or cheese and ham tbh but my Dh who doesn't like either cheese or butter / Marge likes those tuna curry / chilli pots you can get in Asda on a toastie ,I spray his his bread with that light fry stuff

Sounds weird but is delicious: brown bread, scrambled egg, mushroom and tomato. Scramble the eggs separately to frying the mushrooms and tomato. Then combine. Add a bit of grated cheddar if you have it and some parsley, fresh or dried. Then add to the toastie. Delicious!

Left over Bolognese mince , cheese (mix of cheddar and mozzarella works best), if you're feeling decadent brush garlic butter on the outside before toasting.
Roast chicken, pesto and mozzarella
Mushrooms and any strong blue cheese
Tuna, spring onion, strong cheddar.
DH loves banana and peanut butter or Nutella but I think that's almost a reason for divorce.

Well these put my cheese and Branston pickle toasties to shame.

Occasionally I treat myself to a cheese, salami, pepperoni and jalapeño toastie.

Cut pre-rolled puff pastry to size. Fill with stewed apple or mincemeat or combination of the two. Amazing. Or sliced pear or banana and Mars bar.

Ooh also if you cook fajitas, keep back a little of the papers, onions etc and chicken cooked in Mexican spices, in a toastie the next day with some cheese, eat with salsa, guacamole or both!
Basically most leftovers can be made into a decent toastie
