Omelettes :( They either burn or they're raw in the middle.

Oh and I can't make fruit cake, cook steak or poach an egg
@HelgaGPataki I used to have that problem. Now I soak a tea towel in cold water, fold it lengthways until it's roughly the same size as the tin. Wrap the wet tea towel in tin foil and wrap it around the tin.
Your sponge is cooking too fast on the outside causing the dome.
Also put less batter in the tin, fill it just about halfway
Thank you!

TrickyD Oh, that's really interesting! Every recipe I looked at wanted you to blind bake it first. Maybe I'll make quiche-perfecting my lockdown project and have another go...Thanks!

After many attempts to cook rice that usually ended up mushy my foolproof recipe that works for me is
I cup of rice to 1 and 7/8 cup of water (so just under 2 cups to 1 cup of rice.
And simmer until all water is absorbed.
Remove from heat and leave for ten minutes then fluff up. Tip: if I want yellow rice I just add Tumeric powder to the water whilst cooking.
Like most people on here who say to use 2 cups of water I find this a bit too much and my rice ends up mushy. So a fraction less than 2 cups to 1 cup of rice works best for me.
