We’re actually doing a turkey, a ham and a roast pork loin. Not because we’re greedy (well actually we are
) but because I’m kind of combining an English and a Danish Christmas dinner to make it extra special as this is the first year in quite a few that we are able to host my IL’s for Christmas. I was planning to do the two on two separate occasions but we’ve decided just to combine, for various reasons.
Plus the rest of the menu:
Gløgg and æbleskiver on arrival (mulled wine with almonds, dried fruits and orange slices, and Danish pancake spheres served with icing sugar and jam). Mince pies, too, of course.
Gravadlax with honey & mustard sauce, pickled herring - 2 varieties, boiled eggs, frikadeller (pork & beef meatballs) with pickled beetroot salad, liver pâté with crispy onions, bacon & remoulade. Plus something else but I can’t think what! All served on grain rye bread.
After the main we will have cheeses and crackers, with port.
Pudding will be risalamande - traditional Danish rice pudding mixed with whipped cream and flaked almonds, served with a warm cherry sauce.
Then coffee and marzipan cakes. And Christmas cake.
