What is the best soup recipe ever?

Wednesday is the newly designated Soup Night in our house. I've a fairly good grasp of lentil and veg, but I need to expand the repertoire!

Leek and stilton is my favourite!

25g butter
700g leeks (trimmed and thinly sliced)
1 large potato cut into 1cm cubes
570ml water
2 veg stock cubes
110g stilton grated
salt and pepper
150ml Single cream

Melt butter in pan.
Add leeks and potato and allow to sweat for a few minutes.
Add water and stock cubes, bring to the boil then simmer for 15 mins (until potatoes are tender.
throw in a blender.
Return to heat and stir in stilton and salt and pepper till cheese has melted and soup is piping hot.
Stir in cream.

It really is a brilliant soup especially for a winters day.

Mint pea soup, I made it using the BBC recipe, nice and easy, I didn’t add the sugar personally and added some black pepper instead as I wanted it less sweet (the peas will usually bring the sweetness)

Novella has a great recipe for a split pea soup in Feast - very easy (and vegan, if needed, although she and I! - serve it topped with chopped frankfurters, mmm).

Spicy roast squash soup

Chop butternut squash into pieces, drizzle with oil and sprinkle with cumin seeds and chilli flakes. Roast in the oven. Fry some onions and garlic, add stock and the roasted squash and then blend. Delicious

Google Finnish salmon soup (lohikeitto) it's lush, we swap the dill for parsley as my dc are dill-phobic and it's just as good, serve with French stick mmmmmm

Someone else with an official soup day! We have soup and toastie Monday as it's easy at the start ofthe working week.

Favourites include pea and ham hock, chicken (with own stock from the sunday roast), leek, potato and bacon, mushroom and tarragon, savoy cabbage cannelini beans and bacon, butternut squash.

My freezer has its own soup drawer. I get twitchy if we are below 4 soups for 2. need to get making some more!

Basically just chuck everything in on top of a softened onion and a bit of potato for thickening, add stock fo choice, simmer, then blitz. Apart from the savoy cabbage one, that comes as is.

If you are blending you don’t even need to peel and to make it easier to cut just hung it in the microwave for 3 minutes on high. Love butternut squash soup.

I should have mentioned that @BashfulClam, I never bother peeling it but thanks for the tip about the microwave, it can be difficult to chop

My soup is a winner here, butternut squash, red pepper, onion, chilli & potato to thicken, roast all the veg & then add veg stock and simmer, I have difficulty in chopping due to disability, so DH does that but, butter squash roasts will without peeling, just scoop it out when cooked, really easy and wholesome.
