What is the best soup recipe ever?

Wednesday is the newly designated Soup Night in our house. I've a fairly good grasp of lentil and veg, but I need to expand the repertoire!

@PomWestie in a roasting pan, over with foil & add a little water to the chopped up veg steams for about an hour at 180. You don’t need to add the chilli if you don’t like it. I add half an de-seeded red chilli it adds a kick rather than being too hot. I don’t peel the butternut squash, cut it them scoop out the flesh when cooked. Enjoy.

Great thread. My favourite soup is Ham and Pearl Barley, a recipe I got from the Covent Garden soup book. Can't find it online and am on my phone, will try to post it later

Sweet potato and coconut.

My own recipe I made up

Saute sweet potatoes, onions, garlic, chilli flakes, then add coconut milk and stock...simmer till all is tender. Blend. Sprinkle with chopped coriander

I usually make soup out of whatever I've got and don't use a recipe but this is a favourite from Jack Monroe.

Fridge raid soup! Whatever is left at the end of the week and needs eating up before the next weekly shop.

Obviously with homemade stock from left over sunday roast carcass.

Chicken noodle sweet and sour soup is the ultimate winner in our house with whatever we have chucked in for good measure - old soggy Lettuce never tasted so good.

Ham and Pearl Barley Soup

Serves 4

Ingredients
• 30g Pearl Barley
• 30g Green Lentils
• 30g Red Split Lentils
• 200g Tinned Haricot beans, rinsed and drained
• 800ml ham or chicken stock
• 250g cooked ham
• 2 medium carrots, diced
• 1 medium onion, finely diced
• 2 tbsp olive oil
• 1 tbsp parsley

Method
• Fry the onions
• Rinse lentils and pearl barley, add to saucepan with stock and carrots
• Simmer for 30 minutes
• Shred the ham into bite size pieces, add it to the pot with haricot beans and potato. Simmer for 30 mins more.
• Check all pulses are cooked, add extra stock or water to adjust the consistency to taste
• Season with parsley

On the Thai soup front, this Thai Shrimp soup is so easy and delicious with a red curry base damndelicious.net/2015/02/18/easy-thai-shrimp-soup/. I used Mae Ploy red curry paste for mine. You can also easily switch out shrimp for chicken or tofu. In terms of stock, I used Marigold stock powder instead of buying a container of veg stock and it was perfectly fine. I served it with a bit of rice in a bowl then poured the soup over. SO good.

Warning! Do NOT use reduced fat coconut milk, it makes the texture all weird and it loses half the lush flavour. The first time I made this soup, I used full fat coconut milk. The second time I made it, I used reduced fat because that’s all I could get during lockdown. It was still alright but nowhere near as good.

I love Nigella's minestrone soup in How To Eat as mentioned by a pp, although curiously it doesn't involve any tomato or garlic.

Cauliflower makes a delicious soup. As does watercress.

I'm not keen on the sweet vegetables like carrot, squash or sweet potato in soup. I like my soup to be really tasty and savoury. French onion is another favourite although takes forever to cook. But yum.

I don't like smooth soups, I prefer chunky soups- far more interesting.

I get complaints if my soup isn't "dinnery enough" so I give you the dinnerist dinner soup of all (usually made with whatever is left of a roast chicken) and I buy an enchilada sauce or a Mexican cooking sauce to bung in - www.gimmesomeoven.com/cheesy-chicken-enchilada-soup-recipe/
