What is the best soup recipe ever?

Wednesday is the newly designated Soup Night in our house. I've a fairly good grasp of lentil and veg, but I need to expand the repertoire!

Tonight’s soup:

White onions, garlic and fresh ginger turned golden in butter & olive oil (looow heat for around 30 mins)

Cumin, corriander, tumeric, chilli, white pepper, sumak, smoked paprika, cinnamon to taste (varying amounts to taste but the smallest amount of cinnamon. Just a hint).

Cook spices with onion / ginger / garlic mix for 2 mins

2lb or Carrots and 3 parsnips. Chopped via food processor. Sweat / mix with onions and spices.

When softened, add stock (mine was made from Sunday’s roast juices of chicken, rosemary, lemon and garlic added to a wine stock pot and 900ml of boiled water).

Bring to boil. Skim. Reduce heat to simmer for 20 mins or so. Skim as required.

Blitz with Billy Blender.

Eat for 3 days (adding spinach / grated cheese / chicken as required).

Italian style courgette soup (basically courgette, basil, garlic and parmesan flavours).
It's lush.
Works without the cream too.

Cheats version - At least 3 or 4 large onions sautéed in good olive oil very slowly. Add a couple of cans of good consommé when onions are sticky . Cheesy croutons to serve!

Minestrone- nigella has a good base recipe on how to eat (although I forego the potato). Very welcome here as a post football Saturday lunch with lots of Parmesan

French onion soup is my absolute fave, but it’s a special occasion soup for me.

Avgolemono, or Greek chicken lemon soup is lush. This is a pretty good recipe, although my yiayia always made it with short grain rice. Be careful when adding the egg!

This is also delicious - spicy carrot soup with coconut milk (also vegan). It's made in an instant lot but you could easily do it on the stove.

This is one of our family favourites, i usually have a few portions in the freezer. We are q family of soup lovers and have a bowl most lunchtimes.

Also , my granny's veg soup called a pot o' kale.
Onion,leek, turnip, potato, carrots, kale sauted in oil. Veg stock. Big chunks and not whizzed. Always better the next day. And cooked for aaaages. My granny made it with bully (boiling) beef but I'm vegan. She also put a broth mix but i find it fine just with veg.

We also love a spicy tomato. Basically a spicy ratatouille but with lots of liquid. We add a few bits of broken spaghetti in it. Onions, garlic, big chunks of courgette slices, peppers, aubergine. Just whatever i have in. Tin of tomatoes. Stock.

Oooh, another one i haven't had for ages that i used to eat a lot of was a creamy sweetcorn soup. I might look up a recipe again.

Thai soups are a treat.

Even though we tend to have soup for lunch, I like the idea of soup and a toastie for dinner.
