How to make courgettes nice?

I have never really liked courgettes as I find them too watery and there's something about the taste I'm not crazy about. However, we have been given some from my parents garden plus they are so healthy and cheap I'd really like some ways of making them nice if anyone has any good recipes?

I can usually get hold of any ingredients and eat pretty much everything else.

Ohh thanks paper monster. I made the Nigella cake in the end. It was lovely. Didn't bother with the frosting but will next time.

I peeled them and then threw them in a soup yesterday. Very tasty.

I also roasted some with red pepper and garlic, then mixed that into chickpea salad.

Cut into long matchsticks, fry with lemon juice, plenty of mint, handful of parmesan, stir through some linguini- plenty of black pepper. Yum

BBQ split lengthways then put mayo on.
Fry hard in thin slices, salt.

Last time I had a few hanging about in the fridge I breadcrumbed them and did them with a Katsu sauce. I always have some sauce in the freezer, it’s really easy to make, I use Gizzi Erskine’s recipe but blend it rather than strain it so it’s thicker.

Slice them lengthways, lightly coat with oil and seasoning, sear them on a very hot griddle.

Chop into 1cm cubes and fry in butter with basil, fresh chili and salt, when nearly done add tinned or fresh sweetcorn and cook for a few more minutes. Everyone in my house loves this.

Courgette and black beans quesadillas.

Fry courgettes and onions together until soft. Add garlic and cumin, fry for a few minutes before the cumin burns. Add lime juice and passatta, simmer for 10 minutes. In another pan, heat a tortilla wrap and spoon courgette mixture on. Grate cheese on top and fold one half over. Do this until you've used all the filling. Serve with spited cream.

i make a brie and courgette gratin which is absolutely divine, but about as far from healthy as is possible

Slice courgettes and saute in butter give them a minute or so on each side, plenty of S&P
layer them into a gratin dish with brie and once the dish is full cover with double cream
you can put bacon/prosciutto in with the slices or on top...scatter over a few breadcrumbs and into the oven with it until it's golden and bubbling.

The trick to boiling is to not leave them too long. I don’t cook mine longer that a minute or so, you’re really just warming it up.

However, I have no idea how people fry or roast courgette without it going soggy????!!!

I've noticed mini courgettes in supermarkets lately and much prefer them.

Cut them in half length ways. Rub with olive oil, salt and pepper. Top with plenty of crushed garlic and lots of parmesan cheese. Roast.

The garlic and parmesan combo is great.
