How to make courgettes nice?

I have never really liked courgettes as I find them too watery and there's something about the taste I'm not crazy about. However, we have been given some from my parents garden plus they are so healthy and cheap I'd really like some ways of making them nice if anyone has any good recipes?

I can usually get hold of any ingredients and eat pretty much everything else.

Pan fry thin slices with onion and garlic, add to pasta with green pesto, add protein of choice (we use vegan chickn chunks), sprinkle with roasted pine nuts.

I like them in Thai curry! Hello Fresh do two thai curries with carrots and courgettes, you can just pinch the recipes.

Eat them whilst still fresh from the plant, as they're much, much drier and firmer then, so have more flavour.

Can't beat a freshly picked courgette, IMO.

Just as well - three bloody plants survived this year, so we're gonna have millions of the buggers to get through.

Also I always put them in Thai green curry, they soak up a lot of the sauce though so you might want to add some extra stock/coconut milk.

I love courgettes and grow loads on purpose. Normally fry in butter with plenty of salt and pepper. I made crisps with them the other day by salting to remove water and slow baked in the oven. Today my daughter made courgette and cheese soda bread as recommended on another thread. Delicious 😋

Two options:

Saute in plenty of for a very short time (couple of minutes max) over a very high heat so the outsides are golden brown but the insides are still firm. I usually do this with circular slices. Be ready to serve immediately.

Make a mashed garlic paste (crush with the edge of the knife and add some salt), smear on the courgettes then roast for 15 minutes. Wedges are quite a convenient shape for this.

I've tried putting grated courgette in cakes, but it's minging, IMO. Stick to sweet potato or beetroot for veg-based additions to cake (both of which work very well in brownies).

Grill pan or frying pan with a little olive oil, cracked black pepper, rock salt & a few chilli flakes. Beautiful

I LOVE courgettes, but have never, ever, boiled them....

Just picked some from outside, grated them, mixed with extra virgin olive oil, lemon juice, and black pepper. Popped in a wrap with some chicken and lettuce, yummy.

My other go to, like other pp's, is to disc or ribbon, sprinkle olive oil and black pepper, and pop in the oven until slightly browned.

Finally just chunked, and thrown in oven, again with olive oil and black pepper, with aubergines, peppers and onions.

Cut in ribbons with a peeler. Add olive oil. If you want them a bit softer, try heating them up in a pan for a minute or two (you can add a small spoonful of fruit juice for flavour). Serve in a salad or stir fry (with salt and pepper, and any other veggies you've got lying around, similarly cut thin, and softened by heat if need be)

You can also grate them and add them to a salad or a mash.

Or chop them in quarter circles, and add to a soup.

I don't like their taste much, but with other veggies, they can bulk a dish up, and you barely notice them.

I like them steamed (stick shapes) with olive oil and salt.

I reckon they could be "tempurad" quite well...chop into sticks, steam for 5 mins, egg wash, dunk in panko crumbs and fry in a wok.

(I haven't tried it yet though)

Like *@Ginfordinner*, griddle the slices of courgette but then dress with a squeeze of lemon juice, tear a load of fresh mint over the hot courgette slices, and then put on a big plate or a platter and break a ball of burrata over the top. Season with sea salt and a trickle of very green extra virgin olive oil.
That sounds yummy. We are growing courgettes this year and have a regular supply. I will do this. I can't get burrata, so will have to use mozzarella instead.

Fry sliced courgette to brown a bit and add garlic. Put in a oven dish. Add sliced tomato. Add chopped basil. Top with cheese i used parmesan and mozzerella.

Oven for 30m on 180.

Lovely side dish. Weve had it with roast chicken and with fish.

I use a veg slicer to make ribbons, toss in lemon juice and black pepper, serve with feta cheese.

Use as half courgettj half linguine and king prawns cooked in garlic, white wine, butter and bit of tomato.

This was tonight's dinner- 2x chicken breasts, an orange pepper, 2x red onions. As many courgettes as you can fit n the tin. Garlic, oil, dried herbs. Lemon juice . All cut up. Chuck in roasting tin. Cover in foil and bake~ 190 degrees for about 45 mins.
Couldn't be easier. Had garlic bread and salad. Was heavenly and would feed 4 adults.

Courgettes were the pick of the week at Aldi this week so I bought some. I roasted them last night with other veg, love the ideas, I knew there would be a thread on here.

Courgetti is good. Chop into batons, dip in egg and then ground almonds and bake. Scrummy!
