How to make courgettes nice?

ThisIsNotARealAvo · 06/08/2020 08:08

I have never really liked courgettes as I find them too watery and there's something about the taste I'm not crazy about. However, we have been given some from my parents garden plus they are so healthy and cheap I'd really like some ways of making them nice if anyone has any good recipes?

I can usually get hold of any ingredients and eat pretty much everything else.

I eat a lot of courgette. I fry them thinly sliced with salt and black pepper and have them as a side dish to a lot of dishes or mix them in with pasta sauce. This is another favourite: www.carluccios.com/recipes/penne-giardiniera/

Adult DS won't eat courgettes. We went out for a meal and DH and I ordered a side of deep fried zucchini in a light batter. Guess who ate most of them? He still refuses them cooked any other way.

Am genuinely shocked that people boil them in water- never seen them cooked like that.

Fry them in a hot pan with melted butter and lots of black pepper, and maybe some chilli flakes, then serve with fresh basil torn over the top. Delicious!

I use them instead of aubergines in this recipe:

It is really, really delicious

Roast with rosemary and garlic, or stir-fry with garlic.
Don't let water anywhere near them!

Beetie1 · 06/08/2020 09:35

I add them to everything to bulk things out.

But for a courgette focused meal I do a vegetarian lasagne with grated courgette mixed with the white sauce and layered with the pasta and a tomato based sauce. A good family meal that everyone likes.

Butter!

Omg I dreamt about courgettes last night. Just having flash backs!! 😂

SabrinaSalem · 06/08/2020 10:09

I grow them in the garden so end up with a glut most years! You can chop them up small and add them to any vegetable / tomato sauces and you'd never notice them. Lasagne, chilli, spag bol etc.
Courgetti of course, but you'd need a spiraliser (or a peeler and a lot of patience!). I cook courgetti by dunking it in a pan of boiling water for a minute, max.
For a side dish just slice thinly and fry with herbs like thyme or sage. My parents add lemon juice but I'm not so keen.

Cake is my top tip; I see it's already been mentioned a few times but here's my go-to recipe (from the GBBO Every Day book):

@Thighdentitycrisis

Also grate them raw into salad is good or eat in sticks like carrots with hummus
Yes!! So much better raw
whensmynexthol1day · 06/08/2020 10:28

Just fry them in butter. They're a bit like mushrooms in that you need to fry them long enough so they release all their water and then they will brown really nicely.

Rossaloony · 06/08/2020 10:35

Fried with potatoes with garlic and rosemary until they're crispy - this or courgettie is the only way I'll eat them!

onlinelinda · 06/08/2020 10:41

I like them roast, but my youngsters prefer them fried with herbs etc. then stirred through pasta, topped with Parmesan or similar.

PearsMorgan · 06/08/2020 10:44

Keep them away from water. Slice thinly and bubble in oil with garlic and chile if you like it until it turns into sludge. Then put on pasta or toast.

Modestandatinybitsexy · 06/08/2020 10:51

Thinly sliced, fry in a little butter with garlic and chilli flakes, then a really good squeeze of fresh lemon at the end. Either eat as a side for chicken or steak or let cool to go on a salad.

InTheWings · 06/08/2020 10:56

These are really nice - roasted in thin strips with Parmesan and Rosemary
damndelicious.net/2014/06/21/baked-parmesan-zucchini/

I hope your parents harvested them when they were still smallish and not approaching marrow size.

InMySpareTime · 06/08/2020 11:04

Grated, dried in paper towel, coated in a light batter then fried into courgette bhajis

PrincessHoneysuckle · 06/08/2020 11:07

Put them in the bin and replace with a delicious item of food

homemadecommunistrussia · 06/08/2020 11:13

Slice thinly and stir fry with a little oil, barts Thai seasoning and soy sauce.

FredAstaireAteMyHamSandwich · 06/08/2020 11:22

Cut into Cm slices, ditto with peppers, halved Brussels, peeled shallots, small cauliflower florets. TOS in some olive oil seasoned with salt, pepper, curry powder, paprika leave to stand, tossing every 10 mins. Put on a baking tray into a gas oven no 7 , middle shelf for 30-40 minutes. Yum!

peajotter · 06/08/2020 11:30

Raw courgettie salad. Just dress with lemon, basil and I like to sprinkle some seeds on it.

buttcrackmcheese · 06/08/2020 11:35

I LOVE to slice them on a diagonal, pan fry in olive oil, once they're going golden chuck in loads of fresh lemon juice & seasoning, serve with grilled halloumi 😍

ArtfulPuss · 06/08/2020 11:41

When you've eaten your fill, try drinking them: courgette martini

(Also very good added to smoothies.)

7Days · 06/08/2020 11:43

Fry them with snipped rashers and halloumi

theBelgranoSisters · 06/08/2020 11:46

We stir fry them (sliced thinly)and add some cream cheese& black pepper at the end (or herbs, chillis-anything really)-it blends into a sauce with the water that comes out of the zuchini &is so delish even my teens love it.

ODFOx · 06/08/2020 12:04

Soup: I use the bbc recipe with potato, cheddar and nutmeg. Souperb!
Freezes well and great to use up a glut.
