It’s a nice warm evening and I’d planned on a curry but don’t fancy it now. Have a fairly full fridge and cupboard so looking for inspiration really!

We're having an aubergine sliced long ways with slices of mozzarella and tomato slotted in it, with some more cheese, garlic and parsley on top. Will have some rice with that.

We're trying to make stuffed cannelloni for the first time, DD is going to help me. Taking advantage of the lockdown and not having to make quick dinners before rushing out to one activity or another to try new recipes and teach DD some basic cooking skills.

Sainsbury's taste the difference huge king prawns ( grilled with shell on ) with homemade garlic & chilli butter & oil type sauce, new potatoes, salad & a side of halloumi 😋🦐🌶

Sorry OP maybe the prawns aren't something that are just kicking about in your fridge.

Can't wait .... prawns are the best, could live on them!

@artyandtarty that sounds absolutely delicious! I do have prawns but not shell-on! That’s going on the shopping list for next time though... God I miss being able to “pop to Sainsbury’s”

A prick with a fork markses paella, with asparagus, for me and DH.

I have some Tuna fishcakes for Ds2. He'll have them with chips, as usual.

And I need to cook DS1 his daily sausages. His diet is more restrictive than ds2's, these days (both have asd). So far, today, he's had a chunk of banana bread, a packet of prawn crackers and half a galia melon.

Marinated pork loin chops (just discovered them from Tesco, really good)
Savoury rice with lots of veg and seasoning. It was all cooked earlier, so will be eaten warm with salads rather than hot.

My daughter is making bean chilli and loaded nachos as she’s doing an online sea cadet catering course and has to cook for us all. I’m looking forward to it!
