Peanut Butter cookies

Just discovered peanut butter cookies, 3 ingredients and totally delicious so sharing it for you

200g peanut butter
175g golden caster sugar
1 egg

80g chocolate, optional, recommended

Mix it all together
Oven at 180
Bake for 12 minutes ish

Try not to eat all in one day....!

You can use a good bit less sugar tbh & still nice :)

If you are using cheaper peanut butter it doesn’t need that much sugar imo. But you are right, they are delicious. Also nice with a big blob of jam in the middle 😋

Weird - are you my daughter? She just discovered the exact same thing. If I ignore her for long enough she wanders off into the kitchen, picks a recipe, and makes it. This afternoon was peanut butter cookies.

This is the sort of recipe I'd expect for it:

1/2 cup butter (1 stick, 4 ounces, 112 g), room temperature
1/2 cup (100 g) white granulated sugar
1/2 cup (110 g) packed brown sugar
1/2 cup (130 g) peanut butter
1 large egg
1 1/4 cups (160 g) all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

I suppose you could consider the peanut butter to be peanut flour and peanut oil, so flour and fat.

I've made these plenty of times. They have the consistency of cookies so no it is not just cooked sweetened peanut butter. (The egg is really important.) People are always amazed when I tell them how simple they are to make.

I make smaller cookies, cross with a fork, and only bake 8 minutes.
