Omelette fillings...

Just eaten a rather tasty ham and mushroom omelette and it occurred to me that I have NEVER had any other fillings in my omelettes.

I have always gone to ham and mushroom and I cannot imagine an omelette being any better.

So, good people of Mumsnet, spice up my life, hit me with your favourite fillings and I may give them a bash next time ( I probably won't)

I most often have cheese and tomato but, if I have fresh pineapple to use, I might have cheese and pineapple. Sometimes ham and mushroom with a little cheese, sometimes cheese and spring onion. Otherwise, any leftovers like peppers or sausage that need to be used.

I sometimes add salmon to mine - either smoked or tinned. It's nice with spinach and/asparagus. And mushroom, cheese and spinach is good too.

A subtle change for you could be some pancetta instead of ham? Or maybe some chorizo. I often have things like that on for pasta meals so could easily keep a bit aside for an omelette.

Sliced leftover roast potatoes, roasted vegetables, spinach, ham, chorizo - worth saving small amounts of leftovers for omelette lunches! Tabasco sauce lovely on it too

😂 I wasn’t sure if I should admit to the pineapple, I get a similar reaction from some people when I ask for it on pizza 😂 It’s lovely though! I like a ham, cheese and pineapple sandwich too.

Ummm what ever is in the fridge that needs eating / is going wrinkly .
But normaly cheeses spring onion and left over meat . Last time it was the meat off 2 chicken wings fried with a bit of onion.

3 beaten eggs poured over toed with a bit of greater cheese .
Fried in a 7 inch pan for a bit then finished under the grill .half eaten straight away with a round of bread and butter the other half cut up and snacked on later in the day

Probably a bit dull, but for taste and texture, I don’t think you can beat ham and cheese.

Cheese, obviously. And bacon... or Parma ham/prosciutto cut up and fried before adding the egg. Heart attack on a plate.

Almost exclusively ham and cheddar cheese. Very occasionally I will fry a bit of finely chopped chorizo first and put that in as well, but generally speaking, just a basic ham and cheese, I don't see that it needs tampering with!

Smoked haddock and hollandaise sauce.

Green/red peppers, tomatoes & garlic.

Potatoes & cheese, spring onions if available.

Apricot jam.
