Malteaser cake recipe - help a Catholic out

Help on an Ecumenical matter please Grin So I've been dipping into the world of traybakes - I can make a pretty respectable caramel square (nice, thick, chewy caramel!) and Mars bar crispy square, but I need a good recipe for Malteaser cake.

I tried the BBC Good Food recipe the other day and it didn't have that lovely feeling of your pupils dilating with the sweetness of it all like a good traybake normally has. Am I doomed to never get it right because of my lack of Prod blood? Help! How can getting the right ratio of digestive biscuits, butter, syrup and chocolate be so hard?!

I'm normally a good baker! Honest!

As an English atheist, I'm look at these recipes and drooling. I will have to be careful though, have been dieting.

My DBro lived in NI for a while, and has previously mentioned Fifteens. I think I'll look at one of these recipes here and make some for him.

This is a similar recipe to Eves
Method requires a bit of interpretation.
I’d substitute the marg in my recipe for butter.
I’m assuming teaspoon of Baking powder means level

For the method
Preheat oven to 220oC, 200 for fan oven.
Sieve flour and baking powder together
Add cubes of cut up butter and rub together to make breadcrumbs
Stir in sugar
Add eggs and enough buttermilk to make a soft, but not sticky dough using a wooden spoon.
Try not to work too much with the dough as it’ll make it tough.
Turn onto floured surface
Dust top with flour and roll out to about 0.5 of an inch.
Cut into rounds, maybe 1.5 inches diameter.
Place on baking sheet, brush with a little beaten egg/milk
Bake for 10-15 mins.

I haven’t made these so don’t know how they’ll turn out.

How lovely to see the Protestant Traybake thread get a mention - I had forgotten about it - I will go back and read it again, because it was both funny and delicious!

It was ds3's birthday last week - he's home from university, and this is the first time he's been home for his birthday for several years (he's at uni in Scotland and has changed university and subject once, and then changed subject again, so he is about to go into his sixth year of uni) - generally, he's been celebrating his birthday either by revising for his exams or by sitting an exam.

As he was home, on lockdown with us, I offered to make him a cake - and he asked if, instead, he could have a chocolate cheesecake on a Malteser base - so that is what I made!

Base was 340g of Maltesers, whizzed in the food processor, with butter, and the topping was a no-bake nutella cheesecake mixture.

It was gorgeous - very rich, but delicious.

I have a tip for scones that didn't actually come from a Presbyterian lady, but from a book by one of those fancy pants English 'food writers' , if you ever heard the like Grin

Bake them in a deep roasting dish instead of on a flat tray. That way they don't dry out as much.

My traybake guru is Jane's Patisserie, very much rated amongst baking groups.

I've done the chocolate traybake and it was heaven, the Malteser one is next on my list.

Since we’ve been in lockdown I’ve been trying to encourage DS to do some baking to keep him off the Xbox.
So far he’s done 15s without the devils spawn cherries in and wheaten bread.
Not bad for his first attempt.

This thread has brought back so many memories of my mum.
In her day she didn’t use scales to weigh anything in baking and always judged by eye.

I’ve never managed to make an apple crumble as good as hers.
Hallowe’en was always marked by apple tart, toffee apples and kurn (currant) squares or flies’ graveyards as they were known in our house.

@MulticolourMophead its 15 marshmallows cut up ( princess ones are best ) crushed digestive biscuits, desiccated coconut and glace cherries ( cut up) all mixed to a sticky mixture with condensed milk. Roll into a large sausage shape in grease-proof paper, roll in more coconut and into the fridge til firm.

@Tommorrowsanewday I have to do 15's without cherries and coconut for mine!

Right I now have a fresh batch of Malteaser square in the fridge, let’s see if I’ve been able to go full Prod with this one 😁

Have you tried Nigella’s Malteser traybake? www.nigella.com/recipes/members/megs-malteser-traybake My Mum makes it and it goes down very well with RoI protestants.

Malteser buns - not squares. To be a true prod you need to get the lingo right and it’s always wee buns for everything - cake or traybake alike

I'm an atheist English southerner and in no way claim any traybake expertise, BUT substitute gingernut biscuits for the digestives in your malteaser traybake and O.M.G... or possibly O.M.Thereisnohigherbeing....

As a Prod from somewhere not too far from Ballymena, I would call them Malteser Squreso, not buns.

But fairy cakes never cupcakes are definitely wee buns. I have the best recipe for wee buns ever! If anyone wants it I'll post it. On the last thread I posted my recipe for snowballs which are the same as Fifteens except they're round, use big marshmallows and have no horrible glacé cherries in them.

Nigella's recipe has got 225g of Maltesers. That's nearly four of the sharing bags. Shock That seems too decadent for a Protestant traybake. One small bag would do the job surely? Grin
