Yes, I think you are right that it’s empty planes going out- one I looked at had left Manchester at 11.55 instead of scheduled time of 7.05 and there’s another now that left at 12.26 but has no scheduled time shown.

I wouldn't like to be on that flight, Sydney to Dubai was long enough at just over 13 hours.

It’s an incredible feat to keep going for that long. I wonder if they have to swap pilots or anything?

When we flew Dubai to Sydney they had two complete crews and they swapped over, where we were sitting we could see them coming and going from the crew compartment in their pyjamas.

The flight you mentioned from Papette is up there with outliers when it comes to flight duration but the Qantas 9 from Perth to London is I think marginally longer at just over 17 hours..I think the Papeete- CDG is more of an oddity due to the fact it can perhaps be regarded as a domestic service.

As for pilots/crewing on flights like these, rules vary (down to company, unions, national regulator). Under the rules I'm most familiar a flight much above 8 hours there will probably one extra pilot, on anything much more than 11-12 hours ( e.g. Singapore to the UK, which can be well over 14 hours in winter) there will probably be two extra pilots.

Shifts/changeovers are usually constructed on the basis that the pilots who do the take off have to be at the controls for the landing.

It's all very very carefully planned these days (for all flights); companies generally know the fuel consumption of each individual aircraft in their fleet and they have access to very very detailed wind and temperature information across the globe, so they can run a "fuel plan" for a flight from A to B that is probably theoretically accurate to a handful of kilos - I hasten to add that an extra buffer is added to that figure to cater for "what if's" and also on top of that enough to make sure you have legal reserves in hand remaining in the tanks when you arrive at destination.

Ok, next question, in trying to guess where they’re going, I’m looking around Iceland and have found TK6345 - Istanbul to Madrid but even with my sense of direction it seems a little off course?!

It's a cargo flight. FR is basically guessing where it's going, badly! It happens a lot with cargo.
