What was your most recent addition to your 'rotation' of meals that you cook?

Following on from another thread about how many different meals you tend to cook (e.g. if there's about 50 dishes in your 'rotation' that you'll make for tea) - I realised how rarely I add anything to mine. I try new things every so often but rarely do they make the cut of being not too faffy and more than the sum of their parts!

If you've come across a winning recipe recently that you're going to add to your regulars, what was it?

Sounds boring but just a veggie stir fry - DH throws it together using a stir fry mix, mazy garlic/ginger and some spices.

A stir fry tofu thing inspired by an ocado recipe (basically, marinaded tofu in ginger/garlic/chilli/sesame oil/cornflour and stir frying) in a quest to eat a bit less meat.

More variations on noodle-y soups (using up leftover roasts, adding eggs, etc).

Vegetarian haggis. Its easy, but it takes a bit of time, so it's definitely a weekend thing.

Big hit in our house is turkey mince fajitas or enchiladas -

And home made fish cakes (flaked Fish plus mashed root veggies with peas and some herbs chopped in - roast in oven)

I’ve gone a bit mad on the pinch of nom
Books lately so we have added:

Spinach and ricotta Cannelloni
Chicken and ham pie
Beef kofta curry
Goulash

There’s a few more but I can’t quite remember off the top of my head. Totally changed my weekly cooking, best £20 I’ve spent recently

Cream of chicken soup, chicken and chorizo with roast veg and paprika, pan fried venison with various sauces. I have also recently discovered that celeriac is really easy to cook, is absolutely delicious and is a good low carb alternative to potatoes. I had only ever eaten it in restaurants and always walked past it in the supermarket beacause I didn't know what to do with it.

I bought some diced lamb the other day with no idea what to do with it so googled lamb stew recipes and found this one - www.bbc.co.uk/food/recipes/harissa_lamb_with_92207 - very easy and rather nice so I think will be made again

I made a potato gratin with ham and Stilton - someone here described it for using up last of Christmas ham and cheese leftovers.

Chicken fajitas using fake chicken. DS is quite fussy but loves any meal he can put together himself.

This kedgeree recipe, except I changed it a bit as we're mid-move, house-wise, & needed it to be easier. I used a spoonful of curry paste instead of the spices, & added some peas with the rice, & some chopped tomatoes to the top at the end. The tomatoes make a lovely fresh complement to the rest of the dish.

Pad Thai noodles using a pack of stirfry veg from Tesco. I sprinkle lots of home toasted peanuts on top so with those and the egg there’s no need for any meat or fish protein. Squeeze lime juice on top as well - delicious.

Salmon pesto pasta - cook the salmon in the oven and the pasta on the hob then mix together with pesto. Incredibly easy and very tasty.
