What was your most recent addition to your 'rotation' of meals that you cook?

Following on from another thread about how many different meals you tend to cook (e.g. if there's about 50 dishes in your 'rotation' that you'll make for tea) - I realised how rarely I add anything to mine. I try new things every so often but rarely do they make the cut of being not too faffy and more than the sum of their parts!

If you've come across a winning recipe recently that you're going to add to your regulars, what was it?
Here are my most recent:

Smoked haddock salad (I do a soft-boiled egg instead of poached) www.bbcgoodfood.com/recipes/salad-smoked-haddock-chorizo-and-poached-egg

Cod with lentils and chorizo (honestly I don't eat fish + chorizo with every meal):

Bacon and leek pasta. Fry bacon add leeks cook then add tub of creme fraiche and a teaspoon of wholegrain mustard and half teaspoon of dijon. Add pasta water if sauce too thick. Serve on pasta.

It's our fave.

Thank you Daisy169 for the gnocchi recipe - we all love gnocchi here and I always pan fry it but never thought to bake it. Will definitely be trying a variation of that one!

Spam88 · 11/02/2020 11:55

Great idea for a thread :)

We've been trying lots of new recipes recently, and the ones that have been hits are:
Salt and pepper chicken and chips
Spinach and pine nut pasta (from the Gosh website)
Nasi Goreng

Shredded salsa chicken tacos. Cook chicken breasts in the instant pot with the ingredients of a salsa. Serve with toasted soft tacos, salad, cheese and guacamole. Very easy mid-week.

Grilled prawn skewers marinated in Portuguese peri chilli and garlic. DH calls them his "favourite ever". I usually serve with roasted veg and potatoes/rice.

Potato, leek and cheddar tortilla.

Chorizo paella from BBC good food. (It has chicken in it but I just use chorizo). One pot, super tasty!

BertieBotts · 11/02/2020 13:08

"Fried" rice from the rice cooker. Cook rice with stock and some small veg e.g. peas or sweetcorn (or leftover already cooked veg), raw onion plus cooked meat then stir in some scrambled egg and soy sauce. Everyone loves it, even the baby!

I can do fried rice in a wok much the same using cold rice (leftover/cooked in stock) but the rice cooker version is easier, with less washing up.

fishonabicycle · 11/02/2020 18:21

We're trying to eat less meat, so black bean tacos, tofu and sesame stir fry noodles, salmon asparagus bake.

Grasspigeons · 11/02/2020 18:30

Alakazam8 · 11/02/2020 23:13

Thanks @Grasspigeons that’s perfect as we don’t eat bacon!

moochew · 11/02/2020 23:39

Sausage and butter bean stew really did not have high hopes for this one - used normal sausages, fortified wine I always have in the cupboard and I don’t use parsley. But this is an enormously comforting and very easy to make stew and there are never any leftovers!

TechnicalSergeantGarp · 12/02/2020 00:13

Thanks Adagio hope you are somewhere nice. Gin

Spinach and paneer curry(Madjur Jeffrey recipe),serve with rice and dhal (batch cooked and frozen)and make a few chipatis.Quick once you made it a few times takes 30 mins.

Mamabear144 · 12/02/2020 02:30

Garlic, ginger and herb chicken and roasted baby potatoes wedges in a roasting dish together and some beg, super easy to make and tastes delicious

TheHagOnTheHill · 12/02/2020 02:32

Also making the cheese and potato pasta(good food I think),you don't need to precook the veg and if you cut your puff pastry shop no squares, put the mixture in the middle and fold the corners up to the middle and seal the look nicer too.

TheSeaWitch · 12/02/2020 03:04

Mix soy sauce, sesame oil, garlic and toasted sesame seeds into a cooked micro pouch of quinoa and brown rice. Top with smoked salmon, thinly sliced cucumber and carrot & more toasted sesame seeds.

BedStuy · 12/02/2020 13:40

That Korean stew looks nice, I'm not too great with hot spicy stuff but will have a look for that paste. Found the recipe here
thecookreport.co.uk/spicy-korean-chicken-potato-stew/

This is going on my rotation - really nice and easy if you can find time to do the chicken marinade during the day. I used chicken thighs, par-boiled the potatoes, and just finely chopped some ginger as didn't have paste. Wasn't sure about just putting raw tomato and onion on it but it worked well!

I saw this Crispy feta pie thing on another thread, and made it earlier this week. Easy and quick and very very tasty. Served it with a rocket salad with balsamic glaze. Will definitely be cooking it again:
