What was your most recent addition to your 'rotation' of meals that you cook?

Following on from another thread about how many different meals you tend to cook (e.g. if there's about 50 dishes in your 'rotation' that you'll make for tea) - I realised how rarely I add anything to mine. I try new things every so often but rarely do they make the cut of being not too faffy and more than the sum of their parts!

If you've come across a winning recipe recently that you're going to add to your regulars, what was it?
Here are my most recent:

Both delicious and pretty easy. Most of their recipes are pretty simple but have something extra that makes them feel really 'chef-y' but are still easy to do - with the steak it's the aoli and shallots and with the panzanella it's the pickled shallot. The panzanella makes loads, there's usually enough for leftovers the next day.

We originally had these as part of a Blue Apron box but now I just buy the ingredients myself.

I recently mastered hollandaise sauce, much to DH's delight!

For the family, nachos. Cheap Doritos type crisps, bolognese sauce (cooked in batches), sliced avocado, cheese, sour cream, salsa. Everybody loves it.

Moroccan chicken using a Schwartz packet mix of spices. I added peppers, onion, courgette, chickpeas and raisins and it is gorgeous. I had some of the leftovers today with tesco finest Moroccan cous cous and it was delicious. I will definitely make it again.

DH and I are trying to eat more meat-free meals mid-week, so have tried all sorts recently, but this aubergine and feta tart went down well with both of us, so it's likely to make it onto the regulars list:

Not a whole meal but tried roasting asparagus and broccoli instead of steaming them. So good, totally changes the texture and is really more ish. Tossed them in olive oil with salt and pepper, laid them out on a flat tray, sprinkled with parmesan and garlic and cooked for about quarter of an hour.

Spanish chicken

Red onions, spinach, tinned tomatoes, garlic, white beans and halved new potatoes with chicken thighs or breast pieces, all mixed together in one baking tray with paprika and chilli flakes. Bake till potatoes are soft.

I love all in one pot things!

Spaghetti with spinach:
Finely chopped onion and garlic sweated in olive oil.
Add spinach when above nice and soft.

Add some toasted pine nuts
Mix all this in with cooked spaghetti
Generous squeeze of lemon and put grated Parmesan on top.

Simple, quick and very tasty.

Mine are instantpot macaroni & cheese (recipe from salty marshmallow) & spicy prawns & Persian rice from the Persiana cookbook-pretty much the only way we make rice now, delicious!
