Describe your perfect roast dinner

Looking for some inspiration for Christmas and general tips for the perfect roast dinner!

Mine would be:

Roast beef, rib cut
Roast potatoes, coated with honey
A small amount of creamy mash, with a sneaky tiny bit of cheese in it
A large homemade Yorkshire pudding, a bit squidgy in the middle
Roast carrots, parsnips and broccoli
Nice thick gravy made from meat juices with added gravy granules
Pigs in blankets

Which items would you add or take away, and how can these items be improved?
For roasts, I eat anything except lamb and cauliflower.

Please inspire me!

Stuffing!
Sprouts cooked with bacon and chestnuts (Christmas only)
No gravy granules in my gravy - proper gravy made with the roasting juices.

JapaneseBirdPainting · 08/09/2019 15:12

I just adore bread sauce so it has to be roast chicken

PersonaNonGarter · 08/09/2019 15:15

Roast spiced Lamb
Couscous
Yogurt with mint
Honey roasted carrots
Cucumber salad

Sprouts with bacon and chestnut, bread sauce and honey roast carrots sound amazing!

My perfect roast dinner would be a leg of Welsh hogget, brushed during cooking with melted redcurrant jelly. Proper mint sauce. Roast potatoes cooked in beef dripping. Carrot purée. Leeks, cabbage and peas. Gravy made using dry white wine to deglaze the roasting tin.

Red wine to drink alongside, and a comfortable chair to collapse into afterwards while someone else does the washing-up!!

To be honest, OP, you’ve pretty much smashed that. A few notes: Roast potatoes in goose fat, not honey. Stipulate beef to be rare. Perhaps another veg. Potential for stuffing, although controversially I prefer a basic sage and onion, rather than anything too posh.

BeanBag7 · 08/09/2019 15:31

Beef rib is one of the best (if you don't eat lamb) especially if cooked rare.

I would want a good sausage meat stuffing even though beef doesnt traditionally have stuffing.

Also dont forget sauces. I love horseradish with beef.

In terms of veg I like a mixture I'd roast root veg - carrots, parsnip, beetroot, sweet potato.

Vegan ‘meat’
Roast potatoes
Yorkshire puddings
Roast Parsnips
Carrots
Gravy

Apple or bread sauce depending on the ‘meat’.

BishopFrownofStThigh · 08/09/2019 15:38

I don't eat meat but end up doing the cooking

Roast chicken
Roast potatoes and parsnips
Sage and onion stuffing
Bread sauce
Red cabbage
Boiled sprouts
Cauliflower cheese
Steamed carrots with caraway seeds/butter
Pigs in blankets
Roast onion gravy (granules, sorry!)

I do the red cabbage, bread sauce and cauli on Christmas eve to make it easier

HaileySherman · 08/09/2019 15:40

Roast beef tenderloin with gorgonzola cream sauce
Roasted cherry tomatoes with garlic and herbs
Rosemary potato wedges
Creamed spinach
Salad with Boston bibb lettuce, dried sour cherries, maple bacon, blue cheese tossed with a blue cheese vinagrette

Soola · 08/09/2019 15:40

KatherineJaneway · 08/09/2019 15:43

Roast chicken or turkey.
Roast potatoes
Roast parsnips
Huge Yorkshire puddings
Some nicely cooked veg
Tasty gravy - lots of it
Lots of condiments

No honey on anything - this is lunch not dessert!

AragonsGirl · 08/09/2019 15:55

Oatmeal stuffing (skirlie)...yum!

CharminglyGawky · 08/09/2019 15:55

Christmas!

Turkey or possibly beef.
Roast potatoes
Roast parsnips
Stuffing
Pigs in blankets
Carrot and swede mash
Yorkshire puddings (regardless of meat)
Sprouts
Oodles of proper gravy
Cranberry sauce or horseradish depending on meat.
Bread sauce

Need to make at least twice what you actually need so that it feels like a huge feast and can provide leftovers for days afterwards!

UserThenLotsOfNumbers · 08/09/2019 16:00

I do like beef but actually, chicken is my favourite.

Roast potatoes
Parsnips in honey and orange juice
Roast carrots
Cabbage/Broccoli/Green beans or any combo of green crunchy veg really.
Stuffing, not so fussy which type.
Lovely, thick gravy.

With crumble and custard to finish...

Justtrying · 08/09/2019 16:03

Not quite the perfect roast, but tonight's Sunday dinner, chicken with streaky bacon on top, pigs in blankets, stuffing, roast potatoes and parsnips, mashed carrot and swede and sprouts. Going home to cook it soon and hoping there may be a packet of bread sauce mix in the cupboard.

Favourite though is rib of beef with Yorkshire puddings.

purpleleotard · 08/09/2019 16:04

Nut Roast. Haven't eaten meat for 34 years.

Usual trimmings will do.

A chilli sauce adds to the occasion.

CremeEggThief · 08/09/2019 16:04

Nut roast, roast potatoes, roast parsnips, carrot and swede mash, broccoli or cabbage, stuffing and veggie gravy. Bread sauce and red cabbage instead of green on Christmas day!

4under4our · 08/09/2019 16:05

Cooked by someone else.

Nannyamc · 08/09/2019 16:11

Roast turkey/ stuffed smothered in butter with streaky bacon on top
Boiled ham
Roast potatoes with goose fat/ creamy mashed potatoes
Broccoli/ roast carrots and parsnips/ peas
Gravy made from meat juices and bread sauce
Trifle and Christmas pudding for dessert
All washed down with a chilled glass of Pinot Grigio

BillyAndTheSillies · 08/09/2019 16:16

Roast rib of beef, but not too rare. FIL always does the best beef crackling on his.

Crispy roast potatoes that are fluffy in the middle.

Chantenay carrots, roasted beetroot, roast parsnips, roast onions.

Gravy without granules.

God, I could eat that right about now. DH hates roasts so unless we go out or to his parents (mine are vegan) I never get one.

Ronsters · 08/09/2019 16:17

All of these would be great, I do my roast spuds in lard as I think it makes them crisper.
Some cauliflower cheese on the side too.

stucknoue · 08/09/2019 16:18

Pork shoulder, stuffing, roast potatoes, roast carrots, sweet potatoes and parsnips, mashed swede, Brussels or cabbage, or braised red cabbage with apple, bread sauce, gravy. Hoping there's still some left at the pub because this has made me hungry...
