Describe your perfect roast dinner

Looking for some inspiration for Christmas and general tips for the perfect roast dinner!

Mine would be:

Roast beef, rib cut
Roast potatoes, coated with honey
A small amount of creamy mash, with a sneaky tiny bit of cheese in it
A large homemade Yorkshire pudding, a bit squidgy in the middle
Roast carrots, parsnips and broccoli
Nice thick gravy made from meat juices with added gravy granules
Pigs in blankets

Which items would you add or take away, and how can these items be improved?
For roasts, I eat anything except lamb and cauliflower.

Please inspire me!

I would do honey roast carrots rather than adding honey to the potatoes. Also I love bread sauce too so would usually lean in favour of chicken or turkey at Christmas, but I do love roast beef too.
Parsnips also crucial, nice with sage.
Cauliflower/broccoli cheese?

Goose fat roast potatoes with rosemary or possibly dauphinois if made well!
Meat juice gravy
Mint sauce
Roast parsnips and onions
Peas, broccoli and asparagus
Swede and carrot mash
Cauliflower cheese
Yorkshire pudding
Sausage meat and chestnut stuffing

Port gravy

Rosemary and garlic lamb.
Or salt an pepper pork plus crispy crackling.
Sage and onion stuffing.
Gravy with meat juices.
Roast carrots & onion wedges (cooked with potatoes to give potatoes a flavour. Often put lemon wedges in there too)
Boiled broccoli or cauliflower and broccoli cheese.
Cabbage and apple (if doing pork)

This will be a controversial one but I always have rice with my roasts (as well as roast potatoes). My family have always had it and it is so perfect for soaking up gravy

Until I had potatoes dauphinoise with a Christmas roast, I'd never have considered it.
Now I can't think of one without!

A large Yorkshire pudding cut up and served with onion gravy as a starter (no gravy granules, made from meat juices).

Rare rib of beef
Roast potatoes in goose fat
Steamed broccoli, carrots
Mashed swede
Onion gravy
Horseradish sauce
Slices of onion and cucumber in malt gravy, prepared earlier in the day.

Nothing sweet, so no parsnips, no honey or maple syrup glazes, nothing creamy or cheesy.

My perfect Christmas roast

Turkey
Honey glazed gammon
Roast potatoes goose fat
Mash potatoes
Stuffing
Pigs in blanket and lots of em
Roast carrots and parsnips in honey
Brussel sprouts boiled and then sautéed for a couple of minutes in orange butter
Peas (for the kids and as an emergency veg if anything goes wrong!)
Cranberry jelly
Gravy (going against the grain but I prefer Bisto to proper meat juice gravy!)
Apple sauce

Oh and wine to go with it all!

For Christmas, turkey, roast potatoes (cooked with normal oil, lovely and crispy), mashed potatoes, Yorkshire puddings, pigs in blankets, Corkers sausage meat stuffing balls mixed with home made sage & onion stuffing, home made sage & onion stuffing by itself, sprouts with pancetta, honey glazed parsnips, swede, peas, carrots, broccoli, sweet corn and Jamie Oliver’s chicken gravy recipe. It’s a pain to make (ten chicken wings and a million other ingredients) but bloody lovely.

For normal Sunday roasts, chicken, butterfly lamb or pork, roast potatoes, Yorkshire puddings, pigs in blankets, home made sage & onion stuffing and normal veg. Gravy is home made but the quick kind from the meat juices.

Huge roast rib of beef plus:

  • roast potatoes (cooked in beef dripping)
  • Yorkshire Puddings (also using dripping)
  • Mashed potato
  • buttered carrot battons (not coins) with parsley
  • cauliflower cheese
  • green veg mix of tenderstem brocoli, french beans and Savoy cabbage dressed in butter with black pepper
  • lashings (and I do mean lashings) of homemade gravy using the meat juices, homemade beef stock (using the bones of the last rib roast) and reduced red wine with a small grating of horseradish
  • Homemade (hot) Horseradish sauce

Then loads of leftovers to make bubble and squeak with cold beef and leftover gravy the next day...

...and roast beef sandwiches with roasted onions that can be dipped in the last of the gravy the day after that...

Any leftover beef/gravy gets made into homemade pasties with onion, potato and turnip/swede (though it's rare we get that far as it's too nice).
