Describe your perfect roast dinner

Looking for some inspiration for Christmas and general tips for the perfect roast dinner!

Mine would be:

Roast beef, rib cut
Roast potatoes, coated with honey
A small amount of creamy mash, with a sneaky tiny bit of cheese in it
A large homemade Yorkshire pudding, a bit squidgy in the middle
Roast carrots, parsnips and broccoli
Nice thick gravy made from meat juices with added gravy granules
Pigs in blankets

Which items would you add or take away, and how can these items be improved?
For roasts, I eat anything except lamb and cauliflower.

Please inspire me!

Gravy

Sticky toffee pud for dessert, with double cream or ice cream (maybe both?)

I second Nigella's gingerbread stuffing.

I'm not a vegetarian but I don't eat a lot of meat.
My ideal roast dinner:

  • start with a nice warming soup. Last Christmas we had roast sprout and bacon soup
  • roast spuds and other root veg incl carrots, parsnips, beetroots and turnips
  • mashed potatoes
  • steamed veg
  • shallow fried sprouts
  • a mushroom Wellington
  • roast stuffing balls
  • yorkshire puddings
All topped with loads of thick gravy. Excess gravy soaked up with a slice or two of white bread.

Chantenay carrots baked with a knob of butter under a tight lud.

Cauliflour cheese with pork chops or good sausages and chips. How dare anyone destroy its delicious unctious cheesiness by pairing it with a gravy dinner. Heathen behaviour.

Ooh - all sounds lovely.

I would want honey roasted parsnips, not honey potatoes. Do the potatoes with loads of garlic and rosemary.
Carrot and swede mash not potato mash for me.
Red cabbage and apple with spices.
Leek gratin if you have anyone veggie coming as an extra non meaty side.
Sprouts with definitely roast chestnuts and either chorizo (if everyone attending eats meat) or garlic and thyme (if not).
Really good nut roast both as a veggie main and for everyone instead of stuffing. I am usually catering for at least one vegetarian and doing a big nut roast as part of the main spread works better and feels more inclusive than a sad little single portion. Most carnivores happily dig in too. Usually cook mine in a bundt tin and decorate with chestnuts, toasted almonds, cranberries and fried sage leaves to look like a lovely jewelled wreath.

Gravy
Mint jelly

I love reading about all the different ways people do vegetables and potatoes I.e, with herbs or marmite etc.

Christmas is all about turkey crowns done overnight in the slow cooker.

Gravy made from the juices.
Stuffing.
Pigs in blankets.
Roast potatoes where the heat was turned up high on the last ten/twenty minutes so they're super crispy on the outside.
Extra crispy bacon(to emulate when you roast the turkey with it on)
I'm never fussed on the veg(Blush) so I choose one favourite from each family member. So baby corn, broccoli and honey roast carrots.
Endless home made Yorkshire puddings.

And all of this made in epic proportions so the leftovers feed us and any guests until the new year.
