Carrying on from the Tastiest Protestant teaybake thread - I thought I would start a new thread now, so there is no risk of us running out of space and having a traybake-less interregnum!

@drspouse - you could try making your own spreadable butter with softened butter and a bit of a flavourless oil that’s not palm oil.

Oh good idea!
I find my pastry made with just butter is really hard to work with too so may try adding a bit of oil.

I seem to remember Mary Berry recommending a mix of butter and marg in cakes, butter for flavour and the marg for a better texture.
Perhaps we could appoint Mary Berry as patron saint of the new thread? or is that just a bit too catholic?

This is the only tray bake that I do. Not a natural Baker but these taste delicious
Crushed digestives with melted butter and soft brown sugar pressed into tin and flaked almonds chopped walnuts and chopped red and green glace cherries sprinkled evenly over top. A small tin of condensed milk poured over and then baked in the oven

@SuperLoudPoppingAction I got them at a local Eurospar but they did not have them last Christmas. I might try Greens in Lisburn. I have made them with pecans and glace pineapple

Lemon and coconut slice I had in Deli Lights yesterday. I think I could replicate this at home easily enough. Crushed rich tea or marie biscuits, dessicated coconut, butter, condensed milk, lemon zest. And then glace icing made up with lemon juice and zest on top. It was amazing.

The thing behind was mint aero slice.

8ozs of Digestive biscuits
1oz soft brown sugar and mix with
4ozs of melted margarine or butter
Line tin and press down

Sprinkle top with
4ozs of chopped walnuts
2ozs of flaked almonds
3ozs of chopped red glace cherries
3ozs of chopped green glace cherries
Dribble 1 small tin of condensed milk over the top and bake at 180° for 20 mins

My great aunt used to make Easter nests with shredded wheat drspouse? Much better chocolate ratio than cornflake ones.

Does anyone have a recipe for a mint aero slice? I've never heard of one before but now I know that such a thing exists I must try it.

I thought I'd spotted one in a coffee shop yesterday but it turned out to be chocolate and lime 🤮 maybe because I am nowhere near Ireland.

Re: runny fudge icing - I will check with mum, next time I speak to her, but I've found a lemon fudge icing recipe online that says you melt the butter but don't boil it, and beat that into the sugar, then heat up the lemon juice in the butter pan before beating the hot juice into the sugar and butter mixture.

If I was making this, and it didn't look thick enough, I'd probably just add a bit more sugar - but that is just a guess.

Trex is the best for pastry! There was a thread on here a couple of weeks ago about mint cakes made with rich tea biscuits, I made it and they were lovely! I think the thread was called a packet of rich tea biscuits.

I've managed to find a couple of handwritten recipes in my book. Early on in the first thread someone referred to a sort of basic tiffin-type recipe which I remember eating as a child, and I've managed to find that along with the Mars Bar crispy quantities. Happy tray baking!

Late to this and just caught up with the other marvellous thread!
I used to make traybakes every week at work before I retired and we raised loads of money for charity.
This one was far and away the most popular one. Especially with the unusual ingredient!

Salted chocolate ­tiffin­

Preparation time: 15 minutes Cooking tim­e: none

Ingredients:­

225g butter­
100g semi dried cranberries (or see abov­e)
50g soft light brown sugar­
3-4 tbsp Golden Syrup­
250g Rich Tea biscuits, crushed­
3 packets ready salted crisps, crushed­
200g melted bitter chocolate­
Method:­

Melt the butter in a large saucepan, the­n add the cranberries and mix well.
Stir in the sugar and Golden Syrup then ­add the biscuit and crisps and mix well.
Spoon into a greased 30cm x 20cm tray, a­nd spread out evenly. Press down lightly­. Chill well.
Once chilled, spread the melted chocolat­e over evenly.
Using a serrated spatula, quickly make t­ight, wiggly lines across the top, then ­chill well.
Cut into small pieces when chilled.­

I have joined just to add to this thread.... I've recently been given the EGR cookbook from the ultimate EGR rally in 1984...DH doesn't understand why I'm so excited Grin I'd add pictures but I don't know how.
