What goes on top of cheese on toast that will blow my mind?

Fancy cheese on toast for lunch, what can I top it with to make it extra delicious?

Cholula hot sauce.

Sliced tomatoes and brown sauce.

DH swears by crumbled black pudding, egg, mustard and Worcestershire sauce mixed together in the cheese mixture.

Slice of ham under cheese, pineapple ring on top of cheese then fill hole in pineapple (after grilling) with ketchup - yum!

Really good chutney under the cheese. Delicious.

A lattice of anchovies interspersed with heroin.

Arf.

Branston pickle.

Worcester sauce, mustard and mayonaise
onion and tomato grilled with cheese

Salsa under the cheese.

Cayenne pepper

Lao Gan Ma - black bean Chinese chilli sauce.
Or the aforementioned heroin.

agree with marmite under the cheese

Jalapenos under the cheese

Patak's brinjal pickle, or a very light drizzle of truffle honey

Shredded ham,cherry tomatoes and lots of mature cheddar!

Sliced spring onions under the cheese, grated black pepper on top.

Marmite would be my go-to but I might try some of these other suggestions now.

Grated black pepper??? Ground.

streaky bacon cooked until the fat is crispy under the cheese.

Some cooked mushrooms.

Instead of just slicing or grating cheese make a thick mushroom and spring onion sauce, add the cheese and pour over the toast.

I second mango chutney - amazing with any blue cheese. Kimchi also fab.

Beans

I prefer a proper welsh rarebit rather than grilled cheese on toast.

So beaten egg and mustard then mix in grated cheese and grill until browned.
