Ooohhh I love proper home made soup .
I have just bought about 4lb of oxtail ( to be split up ) and barly to bung on the slow cooker with carrots onions .

I also have some very cheap ham hocks and slightly sprouting spuds and a bendy leek or three that will make a very filling soup .

Whatever I have lurking in the fridge, boiled with a stock cube, then blitzed with the stick blender and double cream added.

Today was Christmas ham, courgette and leek soup!

Waitrose ready chopped kale and pearl barley mix made with home made stock If i have any. Sounds vile but tastes fab and is often on offer as has a very short shelf life. Their minestrone is good too, and no prep required.

I love spicy parsnip and broccoli and Stilton. Also recently discovered a red lentil and bacon recipe. Amazing.

Red lentils, passata and harissa paste, done in slow cooker, make a big batch and it freezes beautifully, can have it left chunky or whizz it up if you prefer smoother.

I am weirded out by combinations of too much stuff in a soup, so tend to stick to one of two main ingredients only, like bns and sweet potato, or broccoli. I do like a bit of spice or chilli. I'm on a soup kick next month to redress the awful diet the last week or so!

Carrot and coriander

Sweat about 6 carrots, a medium potato and a small red onion with a tablespoon of butter for 10 mins.
Add 1 litre veg stock and 1 heaped teaspoon coriander and simmer for 20 mins

I like to whizz it up so it's smooth, salt and pepper to taste. Yum.

Leek and celeriac was very nice. I added a carrot in too. Cook in veg stock until root veg is soft then blitz. Celeriac gives a nice creamy texture.

Parsnip, cauliflower, carrot, onion, red lentils, stock cubes, water, salt pepper. Nom. Veg all diced small, saute in butter, then add stock cubes, lentils etc.

The red lentil and chickpea soup from the good food website is my absolute favourite. I don't blend it and never have creme fraiche in...

My Oma's vegetable soup with meatballs (can also be made with beef cooked in with the vegetables). It's a family recipe she taught me (and only me) to make for everyone. I've been generous and shared it with whoever in my family asks for it.

We've got some now slightly drying out roast beef to use up, is there something I can do soup wise with it? (I've got one of those soup makers but not much imagination Xmas Blush)

I love a minestrone. So good for using up dregs of fridge stuff.
I always soak the arse end of bread left in oil and salt and make croutons 😋
