Yesterday's spicy roasted parsnip was gorgeous. Tomorrow I'm trying out creamy cauliflower with Stilton with crumbled, crispy bacon on top.

I made a very lazy but delicious soup today - one can of creamed corn, one small can of sweetcorn, osem chicken stock powder, water, noodles, a spoonful of garlic and ginger paste and turkey scraps. All just brought to the boil to cook the noodles and heat through the turkey. It’s one of the nicest, almost instant soups you can make.

I never use a recipe unless trying something fancy for company.
I’ve made some “use up veg before a shop comes” soup today- huge pan, butter, 2 onions, 1/2 bag frozen leeks, 3 stalks celery, 15 skinny carrots, water to cover, simmered for 20 mins, added 2 stock pots, s&p, simmered 15 mins, stick blended the lot quite roughly, added a can each of drained/rinsed cannellini beans and butter beans, simmered 5 mins.

DD14 has even had some and enjoyed and she still has selection boxes left which apparently is it’s own food group/meal at this time of year!

Oh god Cullen skink, if anyone has a healthy but amazing tasking version I’d love the recipe.

We love in NE Scotland and lots of local places serve amazing Cullen skink, so dirty but gorgeous!

Black bean soup -

fry a diced onion, diced red pepper,some garlic, a chopped red chilli and a diced sweet potato. Add paprika, cumin seeds and a splash of red wine plus a teaspoon or so of chipotle paste. Add some water.

Meanwhile mash two drained tins/cartons black beans (I use a potato masher and a lot of elbow grease!). Add this rather revolting looking mix to the soup.

I then stick the stock pot in the oven for an hour or so, until everything all melts together. I find this easier than faffing around on the hob but it does work on the hob too. Add salt and pepper to taste and mash a bit more as you go along.

I serve it with nachos, soured cream and guacamole.

Delia’s Leek, Onion and Potato soup is the best I have ever tasted. Works well using non dairy milk for vegans too.

leek and potato soup fine slice leeks, very small cube potatoes par boil the potatoes put in a pan add a veggie stock cube and a small amount of water salt and pepper start to cook and after about half an hour add a large tub of single cream, cook for another half hour, and either serve chunky or blitz if you like smooth soup yummy

Med.veg. either those ready prepped bags/trays you can buy or basically red and yellow pepper, courgette, tomato, onion etc. Roast in oven with garlicand carrot. Blitz with veg stock. Add whatever you like. Butternut squash makes soup creamy, I've found.

Fin, I love making French onion soup too (DP sounds similar to your DH in terms of keenness!). I think I followed a Saint Delia recipe originally, but now do my own thing (but don't complicate it). I use a Knorr Stock Pot (chicken) as a base, but also add a wee bit of ginger. Or for our veggie friends, I use the Knorr Veg Stock Pot as a base.

Totally easy spiced sweet potato and tomato soup.
Sweat chopped onion, garlic, and red or green chilli to taste in a pan with olive oil, add a tsp cumin seeds or ground cumin, same of fennel seed.
Peel and chunk a large sweet potato, add to the pan with about a litre of stock or water, simmer 15 minutes then add a tin of tomatoes. Season.
Give it another 15 minutes or so, then go in with a stick blender. Adjust seasoning if needed. Serve. Add a swirl of yoghurt if you like.

Store Cupboard Soup.
Standard soup base - chopped onions, garlic sweated in olive oil.
Add two drained tins of cannellini beans and two tins of tomatoes plus about a litre of water or stock. Season.
Simmer 40 minutes, blend roughly (or take half out and blend that till smooth before adding back to the pan)
This is infinitely variable - you can add carrots, celery, leeks, peppers, chillies, whatever you have to hand, or like.
Serve with croutons and grated Parmesan cheese. (Optional)

Onion

Red lentils

Red Thai curry paste (green works but it looks a bit muddy in colour)

Chicken or veg stock

Once this has cooked, blend then add:

Coconut milk

Fish sauce

Lime juice

Sugar

Eat ALL OF IT

Ginger sounds like a good edition. I deglaze sometimes with brandy. Gives it a bit of a kick.

I like
Ministry employees with whatever is knocking about the fridge
Red lentil, tomato and veg made with stock from cooking the ham
Maddhur Jaffrey's muligatawney made with chicken or turkey stock
Delia's leek and potato is good
And I make a nice spicy butternut squash

Homemade soup though; it just ruins you for the shop bought stuff.
